Introduction
Dave hosted 5 of 6 of us (sorry Mark!!!) at Lark. John Sundstrom's cooking is just sublime.
Flight 1 - Snacks (2 notes)
Foie gras terrine, smoked farro toast, dried fig
Potato buckwheat blini, crab miso butter, scallion
Wagyu steak tartare, caper, cornichon, mustard, chives
We broke into the Yquem early with the foie gras terrine, although the 69 Dom was actually a more elegant pairing
White - Sparkling
1969 Moët & Chandon Champagne Cuvée Dom Pérignon
France, Champagne
Lighting in the restaurant was not great, but this was almost Rose-like in the glass. There was the faintest little fart of carbonation when opened and then totally still. At first there some clear sherry notes, not so encouraging, but the clearest smell of white chocolate I have ever sensed in a wine. This is followed with some lime and building notes of slate and salt. Some nuttiness and simply fantastic acidity. The palate is creamy and loaded with white chocolate. The most amazing thing was that this actually gained weight and improved across three hours, shedding the sherry notes and showing more intensity with time. Shocking really.

Deep, mineral, salty, lime zest, notes of salt marsh next to the ocean, mmmm, surprisingly brawny, long. Impressive.

Oh wow, that Ramonet spearmint note is singing, long, salty, funky good Chard. This is just so ethereal and has an energy and minerality that is truly haunting.
Flight 3 - Second (1 note)
Neah Bay halibut cheek, razor clam cream, melted leeks, white sturgeon caviar
Flight 4 - Third & Cheese (3 notes)
Anderson Ranch lamb, morel mushrooms, pommes aligot, grilled spring onion
Twisca sheep’s milk gouda, St. Andre triple cream, Brebis Basque piment d’Espelette, preserved quince, candied hazelnut

1989 Château Lynch-Bages
France, Bordeaux, Médoc, Pauillac
Mmm, textbook example of this wine. Tobacco, quintessential Lynch Bages, deep, smoky, powerful, black fruit, stern, spicy green notes.

1989 Château Pichon Longueville Comtesse de Lalande
France, Bordeaux, Médoc, Pauillac
Mmmmm, racy, green, spicy, really feminine, energy here is fantastic, vibrant, really savory, loaded with Umami. Exceptional bottle.

France, Bordeaux, Médoc, Margaux
Deep, red fruit, charging, soy, meaty flavors. This was very tasty, but I can also say this didn't have a great fill and had a really messy and soaked cork, not a great bottle but still darned tasty.

Baked Alaska: brown butter cake, apricots, burnt honey ice cream, meringue
