A little tired with some sherry qualities, so drink it with something a little on the delicate side. Very little bubbles left and a golden amber color. Savoury biscuit, wet chalk, and cooked peaches. It is a more luxurious style, and really fine.

NK Cappellano Vertical (Maialino, Gramercy Park Hotel, NYC): Gold color. Crisp, yeasty, complex. Long and tasty.
