Very pale greenish-yellow, no signs of oxidation. On the nose - apple, lemon curd, hay (classic Chablis) some citrus and white flowers, flinty and smokey. A slight note of sulfur but more on the lit match side. The attack is firm, medium tartness, decent structure but hoped for more length. Very enjoyable and has elements to indicate a longer life but for me it is a little bit short. Drink now 2027

Deep yellow, moderately rich and full with crisp acidity when opened, deepened with air time bringing more classic chalk, shell, saline hints. Overall more lemon, lemon peel, bit of pear and apple per Hoservin note. Very tasty and enjoyable with increasing complexity and length over two hours at dinner. Enjoyable before, during and after food--served with sauteed scallops/spinach papperdelle. Going strong 8 years on, though perhaps some of the more classic Chablis elements may not be as front and center as some would like.

Good but I really don't know that the Fevre wines sing as disctinctively as they should for the price. Correct and pleasantly absent of any oak, nice fruit but nothing more.

This is perfectly acceptable but not that special. Clear palate, there’s some cut here, but it’s not as chiseled as a vintage like ‘10 or ‘14, and this ‘12 is yet another recent 2012 Chablis that is really causing me to question this vintage. The next night, the oak was much more apparent on the palate.

An outstanding 1er Cru Vaillons from Domaine William Fevre, totally at Grand Cru quality.
Clear and transparent, with crushed sunflower seeds, lime, white flowers, all the seashell minerality you typically expect from a Chablis - and truly energetic, rich, harmonious, vibrant palate that make you crave for more.
What a treat!

Robe de couleur jaune paille intense avec des reflets verdâtres. Premier nez typiquement chablisien sur des notes de coquilles d'huîtres, de fruits du verger et de fleurs blanches, de même qu'une présence très marquée d'arômes de "bord de mer".
En bouche, le vin est très tendu (acidité vive) et demande un peu d'oxygénation dans le verre avant de se révéler pleinement : on prend plaisir à découvrir les arômes de fruits mûrs (poire, abricot, pomme verte), de fleurs, d'herbes citronnées, ainsi qu'une bonne présence de notes minérales, voire crayeuses, et marines/iodées.
La finale est longue et savoureuse sur une fine trame minérale et citronnée. Certainement, le meilleur chablis de ce domaine que j'ai goûté! Ma dernière bouteille attendra encore un peu puisque je crois que ce vin n'a pas encore atteint son plateau.

A whiff of smoke on the pop quickly fades to sea breeze with salted limes and riper citrus. Picks up some buttery richness and minerals on the midpalate that carry through to the lengthy finish. Clean and incisive throughout. Nicely done!

Tasted semi-blind along 2012 Vaillons from Dauvissat, Droin and Raveneau + 2012 Beauroy from Tribut. Way different from all the others, been able to identify it easily with sea shell, pine needles, rose water, mixed of citrus and grapefruit zest. Really well built, not totally in place with a sharp acidity. Leave in cellar for 2-3 years to let time do his job.

Pale golden in the glass. Complex nose of citrus, then mineral notes with a creamy / buttery background. Taste develops nicely in the mouth, citrus fruit into more exotic flavours, with solid backing track. A long finish. I like this a lot and look forward to seeing how it develops.

Popped and poured. Pale straw colour. Fairly expressive nose with hints of citrus fruit, green apples, seashore and chalky minerality. Still quite tight on the palate, but displays good precision and razor-sharp acidity on the medium+ length finish. Could in my opinion use a couple of years to put on some more weight, but further cellaring is really not imperative. Lovely! (89-91 points).

Light, tight, clear and zingy but packed with minerals and depth just fizzing away underneath the surface. A perfect example of tension v time. Wonderful now, sensational in 5.

Nose: This was a little tight at first, but it unwound into crushed rocks, oyster shells, lemon zest, pears, and some white fruits. There is good depth to it with a real freshness to it.
Taste: Light bodied with high acidity. The acidity really emerges with air and is very mouthwatering. Beneath the structure lies crushed rocks, pears, white fruits, green apples, and some gun flint notes.
Overall: This is tremendously young. There are excellent materials here and I would like to see where this goes with time. Right now, it's much better with food if you are acid averse.

Chablis 1er Cru Vaillons Tasting (Oinoscent): Clean, medium/medium+ intensity, oaky aromas, walnut, almond, ripe peach, ripe pear, pastry, vanilla scented oak, youthful. The wine is dry, medium body and intensity, medium alcohol and high acidity, lemon, lime, pineapple, salty, steely mineral, unbalanced due to acidity cutting throught with such ease, medium- finish. Very good quality, premium price, drink now but can hold 88/89
