Notes of citrus in the mid palate, a little grapefruit-y in the after taste. Doesnt quite hit the spot for me, but its not bad. Zero dosage is very apparent, too. Probably wouldnt buy again, but fun to have tried!

(Disgorged in October 2014, 100% Chardonnay from Cramant (33,5%), Chouilly (32,5%), Cuis (22%), Oger (10%) and Vertus (2%), dosage 0 gr/L) Light yellow colour with a greenish hue still showing its youthfulness. Showing incipient maturity on the nose with a delicious roasted coffee and hazelnuts at first and opens up with a delicious butter and cream touch as it opens up in the glass. Yellow apples acidity and lime zest bitterness on the intense palate and with a distinct yellow plums bitterness on the lengthy finish showing lots of minerals and leaving a lovely saltiness on the lips. Such a delight and very refreshing and pleasant right now.. (Best 2023-2033)

Golden yellow, medium intensity. Developed to mature nose. Fruity with yellow apples and lemon. Bread. A slight sweetness, sharp and high champagny acidity, medium body. Broad, mouthfilling start and drying, acidity marked end. In the middle, fruity with complexity in flavours. Very good length with pronounced lemons. Overall impression: Forthright force. Day 2: More of apples, a bit bruised, on nose and palate. Caramel flavours arrives and a bit of licorice at the end. Sharp acidity and prickly small bubbles.
100% chardonnay, no dosage, >10 years on lees. Base wine on steel tank, with malo. Deg three months before shipping.

Markedly smoky and toasty on the nose with lots of torrefaction, chalk, iodine, baking spice and crisp apple fruit. Just fantastic aromatics, hard to keep one’s nose away from the glass. On the palate very much a different story with tangy green apple and lemon notes dominating. Super minerally, compact and linear with terrific laser-like acidity. Bone dry and for sure somewhat reminiscent of licking a battery but in the best possible way. Some might find it austere, I find it exquisite, irresistible and invigorating. Very youthful at this point but also very drinkable with a long, lip-smacking finish that leaves you craving for more. With fresh seafood this chiselled wine reaches completely new heights

Quite developed color. Lovely developed aromas, with green apples, autolysis and minerals. Intense, tight and concentrated with a lot of power and acidity. Very impressive. Quite large scaled for an extra brut BdB.

green apples and slight yeasty smell that blew off after a few minutes. i was surprised it was non-dose! the abundance of fruit fooled me into thinking that there was some sugar in this, even if it was a smidge.
as an aside, paired very well with mcdonalds chicken nuggets at midnight whilst watching Germany vs Portugal at euro 2020(1)

This was a Christmas dinner wine, with blinis and caviar. It was a lovely combination, and the wine is exactly what one would expect a low-dosage blanc-de-blancs to be. For the price, though, I was hoping for something a little more attention-grabbing.

Medium expressive nose displaying succulent ripe yellow fruit, apple tart, lemon curd, sweet spices, brioche and mineral. Very good concentration, packed concentrated ripe yellow fruit, medium fine medium abundant mousse, bright acidity, good mineral presence and a medium to long succulent yellow fruit driven finish. Perhaps this needs another five years or more.

Uncles Fine Wine Spring BYO (Home): Floral nose with some spices, cardboard and paper. A little soapy in the mouth. Full-bodied mousse but the fruit, which is mostly citrus, is perceived as slightly watery and thin. Young and fresh, will last.

Ma première bouteille de ce Champagne. Arômes de pommes, d’agrumes. En bouche, j’ai d’abord été surpris par la présence massive de bulles très fines, mais après 30 minutes, elles se sont calmées! Très minéral, ce vin m’a bien plu et il accompagnait bien les courgettes au saumon fumé.

Beach week; 7/20/2018-7/28/2018: Very pretty stuff. Brisk and bright on the nose with chalk, limes, sea brine along with lemon curd and biscuits. Dry and bracing, salty and oceanic, but lots of depth and complexity as well. Tart lemon bars, lime juice, doused in sea shells and chalk. Vibrant, crisp and fresh. Delicious stuff that will age nicely.

This was stunning tonight--I thought this went through a slight dumb phase since last year, but 12 months of age did this right. Autolosis, hint of sourdough, nectarine, lemon, chalky minerals, classic BdB notes with crisp clean acidity--not at all too bracing of acidity. Lovely. Too bad it's the last one we have. Great with Sword fish carpaccio. Celestino dinner.

2008 PIERRE GIMONNET CUVEE OENOPHILE NON DOSE EXTRA BRUT 1ER CRU- from the special vintage of 08`, this pleased with gifts of mineral infused, peppery mild citrus flavours with some honeyed mild peach notes coming in late; it had bright acidity, was nicely balanced and a great mouthfeel with a creamy mousse.

Prior to last night, I had drank this wine on 4 other separate occasions and on every single one of them, I just wasn't impressed. Unfortunately, we didn't drink the wines blind last night so I'll have to be a big boy here and admit to some potential bias as I saw the label when it was opened and remembered the underwhelming other bottles from the past. There is slate here, some red apple and it was fine but it just doesn't wow me. Aside from the Special Club bottling, which I do own and enjoy, I'm still not sure what the fuss over Gimmonet is all about.

Blake Brown in the OC (Broadway, Laguna Beach, CA): Red apple aromas and a little oxidation. High acidity if the first thing I notice but there's a hole in the middle of the palate, just fades away with a short bite at finish. Just OK and unfornately paired with a Comtes that was singing.

(Disgorged in fall of 2017, Dosage 0 gr/l, 100% Chardonnay) Very light yellow colour with a fine stream of bubbles that lead way for the still youthful nose showing chalk, citrus and after some time in the glass also a nuttiness and flowers. Palate still very youthful showing a citrus acidity combined with a smooth and almost oily orange peel taste that transforms into a long and tough bitterness of grapefruit peel and chalk. The lasting saltiness on the lips was just perfection. Right now this is dominated by its long bitter finish that makes it feel a bit disjointed, but after a couple of hours it feels better and hopefully this will integrate better with some more time after disgorgement. Best 2020-2033.

PnP for a Syrah & Indian Food Dinner. The wine just went down fast. Crisp, racy and very straight on the palate. The freshness and the lightness showed through every drop. If all wines make us feel like this, life would be just so good!

Nose: The nose is balanced, fresh, and aromatic with apples, white florals, pears, white fruits, almonds, and a good dose of mineral tones. There is excellent depth with there being a spring-time and pristine quality to it.
Taste: Medium bodied with high acidity. The acidity is crisp, but balanced while the feel is deft with pears, white fruits, almonds, saline, and mineral notes.
Overall: This was lovely and fresh. It lacks some depth that would kick it into another gear, but what is there is a delicious and perfectly drinking champagne.

Brezza Sarmassa and Some Bubbles (Ballaro): Hugely energetic and lively Champagne. Very clean flavors -- lots of green apple, mineral and zest. Bright and explosive in the mouth. Fun and easy drinking as a warm up.

One of my favorite Blanc de Blancs producers. This was tough to follow after such a big, rich bubbly previously. This is more light, reserved and crisp with light crisp with a nose of green apple, green grape, lime zest, baklava, kiwi, and honey. The palate is lovely and complex but obviously bone dry and youthful finishing on some green pithy bitterness, and honey to counter balance. Subtle. I typically prefer richness in my bubbly, but this is nice. If it were me I'd age it out to pick up more complexity, but I get what people see in it now.

Opened just ahead of midnight for NYE and kind of like 2016, it was fairly disappointing. So many reviewers noted great bite and acidity, we just didn't get any - though nicely effervescent it came across pretty flat. Stored well and didn't really taste off either, so not sure what to make of it.

Crisp, a bit closed, low aromatics; more subtle and clean, but nice concentration and purity. Not how I remember tasting it at Republique. Maybe needed to open up. At the least, this could use 1-2 years cellaring to develop a bit more. I feel good potential here.

IMW 2016 Champagne - Walk-Around Tasting (Hyatt, San Francisco): Really nice floral nose with fresh red berry and citrus. Fresh cut green apples. Red apples. Fuji apples. Superb ripeness. Some darker fruit on the midpalate. High acid which balances it well. Taut. Beautiful apply finish with a hint of brioche.

Bottle #4, this one though as part of a champagne tasting. And again, I am just not a fan. There is some acidity here but I just keep coming back to the place of 'this is missing something'. My notes say 'lacks finesse' as what I found is the acidity over running the palate. It ends with some saline and I get the fact that this is Extra Brut and no dose but I'm just not impressed. In fact, reminds me some of the experience I had recently with the 08 Laval No Dose and not caring for that bubbly either. Maybe the moral of the story is I like dose, just stuff in the single digits.

A very very interesting wine indeed: non-dosage as a Blanc de Blanc. Pale colour with lots of Granny Smith-for those who have spent some time down under-this means tart but unique flavored green apple. Granny Smith from nose to palate, start to finish. Very polarizing. I appreciate it for it's singularity. You may or may not.

Ugh. My final bottle of this drank from the cellar last night and it remains underwhelming. After 3 bottles, I simply never made a connection to this bubbly and I was hoping that this final bottle would be the one. Disappointing too, as it just seems to be absent of the life and energy I would expect from a low dose wine from this vintage.

Very nice BdB, in a style I like. Ripe citrus and tree fruit, lots of minerally crushed rock, this is almost like sparkling Chablis. Good midpalate intensity and a nice mineral finish.

We sipped this bottle while watching England vs Ireland in the Rugby Six Nations Tournament. Brute force softened by elegant bubbles :-)

Light yellow with barely evident, tiny bubbles (they do resound in our ears when swirling around our palate) slowly reaching for the top of the white Bordeaux wine glass. If we had white Burgundy glasses at our serviced apartment, we would have used. Note to ourselves to mention this error in inventory to the management ;-). Oh well...
Aromas of soft, toasted almonds, nutty and some vanilla-cream. We did not expect that much elegance in such a young (2008) Blanc de Blancs, but the wine is elegantly alive on the nose. A young lady radiating maturity beyond her years...you have met her at least once in your life and you were impressed!
Palate is bold, sophisticated texture, definitely dry and sufficiently creamy with a fairly long, somewhat sour finish. She does not shy away after over-impressing from the start. Very interesting.
Definitely a winner and reasonably priced. We can see an even more exciting future...now we just have to pick-up a dozen or two dozen bottles...preferably at wholesale prices!

Disappointed in this one. I expected more yet my net takeaway from drinking my first of three bottles is that this tastes kind of dead and boring. As EB, I figured for some cut, some energy too but in the end it seemed average. Bummer.

Nose: The nose is crisp and clean with apples, brioche, lots of minerals, roasted nuts, and some gun flint. There is excellent definition with an attractive mineral base.
Taste: Medium bodied with tart high acidity. The structure is most certainly there, but the feel is lovely and balanced with apples, lots of minerals, roasted nuts, gun flint, and some white fruits.
Overall:This is a youthful and energetic Champagne. It does feel like it could use a couple of years to fully settle and round out.

A realy fresh and crispy Champagne. The first thing that hits the nose is green apple. Then there is citrus and minerals. The taste is very dry and young, quite complex and long. I like this a lot and will probaly by a few bottles to put in the cellar for 3-5 years. 3 NJP

Autolosis, hint of sourdough, nectarine, lemon, chalky minerals, classic BdB notes with crisp clean acidity--not at all too bracing of acidity. Lovely. Too bad it's the last one we have. Great with Sword fish carpaccio. Celestino dinner.

2008 PIERRE GIMONNET CUVEE OENOPHILE NON DOSE EXTRA BRUT 1ER CRU- from the special vintage of 08`, this pleased with gifts of mineral infused, peppery mild citrus flavours with some honeyed mild peach notes coming in late; it had bright acidity, was nicely balanced and a great mouthfeel with a creamy mousse.

(Disgorged in fall of 2017, Dosage 0 gr/l, 100% Chardonnay)
Very light yellow colour with a fine stream of bubbles that lead way for the still youthful nose showing chalk, citrus and after some time in the glass also a nuttiness and flowers. Palate still very youthful showing a citrus acidity combined with a smooth and almost oily orange peel taste that transforms into a long and tough bitterness of grapefruit peel and chalk. The lasting saltiness on the lips was just perfection.
Right now this is dominated by its long bitter finish that makes it feel a bit disjointed, but after a couple of hours it feels better and hopefully this will integrate better with some more time after disgorgement. Best 2020-2033.

PnP for a Syrah & Indian Food Dinner. The wine just went down fast. Crisp, racy and very straight on the palate. The freshness and the lightness showed through every drop. If all wines make us feel like this, life would be just so good!

Taste: Medium bodied with high acidity. The acidity is crisp, but balanced while the feel is deft with pears, white fruits, almonds, saline, and mineral notes.
Overall: This was lovely and fresh. It lacks some depth that would kick it into another gear, but what is there is a delicious and perfectly drinking champagne.

Trots att denna är non-dosage upplever jag inte samma syra som hos Fleuron. Detta är en utmärkt champagne till skaldjur eller rå japansk fisk, skulle jag säga. I motsats till Fleuron 2008, som är en smakexplosion, är denna för närvarande aningen sluten.

One of my favorite Blanc de Blancs producers. This was tough to follow after such a big, rich bubbly previously. This is more light, reserved and crisp with light crisp with a nose of green apple, green grape, lime zest, baklava, kiwi, and honey. The palate is lovely and complex but obviously bone dry and youthful finishing on some green pithy bitterness, and honey to counter balance. Subtle. I typically prefer richness in my bubbly, but this is nice. If it were me I'd age it out to pick up more complexity, but I get what people see in it now.

Opened just ahead of midnight for NYE and kind of like 2016, it was fairly disappointing. So many reviewers noted great bite and acidity, we just didn't get any - though nicely effervescent it came across pretty flat. Stored well and didn't really taste off either, so not sure what to make of it.

Nougat, creamy and fruity nose.
Tough acidity, but once you get through you find a dry, elegant and well balanced wine, with very Classic Champagne characteristics. Nice.

We sipped this bottle while watching England vs Ireland in the Rugby Six Nations Tournament. Brute force softened by elegant bubbles :-)
Disgorged May 2014. Zero dosage. This should be fun!
Light yellow with barely evident, tiny bubbles (they do resound in our ears when swirling around our palate) slowly reaching for the top of the white Bordeaux wine glass. If we had white Burgundy glasses at our serviced apartment, we would have used. Note to ourselves to mention this error in inventory to the management ;-). Oh well...
Aromas of soft, toasted almonds, nutty and some vanilla-cream. We did not expect that much elegance in such a young (2008) Blanc de Blancs, but the wine is elegantly alive on the nose. A young lady radiating maturity beyond her years...you have met her at least once in your life and you were impressed!
Palate is bold, sophisticated texture, definitely dry and sufficiently creamy with a fairly long, somewhat sour finish. She does not shy away after over-impressing from the start. Very interesting.
Definitely a winner and reasonably priced. We can see an even more exciting future...now we just have to pick-up a dozen or two dozen bottles...preferably at wholesale prices!

Light yellow colour with a neverending stream of extremely fine and tiny bubbles.
Youthful on the nose showing nuts. minerals and flint. Extremely dry on the palate showing crispy green apple acidity and nice length. Needs cellaring to develope and soften a bit.
