Restaurant service, cellar temperature, Zalto stems. Bright, full gold color. Very expressive aromatics and flavors of key lime, jasmine, slate and honeysuckle, among others. Oxidative style adding complexity. Intense expression through the palate, precise yet seamlessly integrated. Medium body, rounded edges, very bright, with persistent presence and length. In a great place.

Rich and ripe fruit on the nose, with some hints of oxidation. Palate is more typically chablisien, albeit in a richer style. I think this is just Pico's style. Dont go for this if you're looking for Dauvissat. Also, I don't really see this improving from here.

This is fantastic now. Drank it together with the Butteaux 2014, that was good but this was just so clearly better - more cut, more shellfish minerality. Peak drinking now.

A private lunch (Restaurant Bak, Amsterdam, NL): Tasted blind. Quite a full yellow colour; marvellous nose, really singing today, excellent varietal and terroir typicity; elegant and steely palate with a lovely stuffing of ripe fruit, everything in the right place; excellent persistence. Casual wine dinner at De Golden Spoon Seafood: Opened the night before and brought half of the bottle for dinner. Better on second day as it came across as rather disjointed on the first day. Ripe, tropical fruit as usual for this producer, but I felt this lacked energy and acidity compared to the Butteaux I had before. Based on my previous experiences this was slightly advanced in my book, but others seemed to like this a lot more than I did for the floral nose and round texture.

Bouteille ouverte dimanche dernier, conservée au frigo et terminée quatre jours plus tard.
Robe claire, légèrement dorée, brillante. Nez sur les fruit blanc et les fleurs à l'ouverture, qui va évoluer sur les fruits jaune et les agrumes.
Un vin qui s'est remarquablement conservé au frigo, bouteille juste rebouchée, pas de trace d'oxydation au bout de quatre jours. Léger perlant à l'ouverture qui disparait assez vite. Il y a de la tension, c'est enrobé par un joli gras, l'aromatique est ouverte sur le fruit. Moins long et intense que Vaillons 2014, plus simple je dirais même, ça reste néanmoins très bon et ça doit pouvoir se conserver quelques années encore.

Shinji Chablis lunch. Bottle breathed ~2 hours before the lunch. Tasted on P&P and then again at restaurant. Appearance is clear, pale intensity, lemon colour. Legs. Nose is clean, medium+ intensity, with aromas of clean white stony minerals, white flowers, white peach, citrus lemon. P&P was showing more, and became tighter with air actually. Developing. On the palate, dry, mouth-watering high acidity, medium- alcohol (12.7%), medium body. Medium+ flavour intensity, with flavours of clean citrus lemon, white peach, zesty sweet lime, soul cleansing white chalky stones minerality. Long wet saline yet crisp acidic finish. Becomes more salty with more air. Very good quality. Pure precision. Young now. Good potential. Interestingly, Thomas Pico ferments in barrel just like Raveneau, but the end product feel is quite different, and I don't mean that in a bad way.

Vibrant palate of stone fruits, lemon lime citrus, zests, slate with a mineralic core and a precise cut of acidity. Tensile and expansive flavors with great length. This is a Chablis that taste more like a Cote de Beaune white.

Soul.searing.acidity! And I mean that in the best way imaginable. Lemon, maybe curd, more lemon. Long - strikingly long - finish. And that acidity! This is going to be a blast and absolutely adorable to track in the coming 3-7 years. I love this producer (his every day village is fabulous), and I love this cru. Yay!

A really excellent Chablis which always tricks me into believing it is from Côte d‘Or. The bouquet convinces with peach, champagne like brioche, lots of minerality and Scottish shortbread. Good acidic spine, but mouthfilling at the same time.

Great combination of fruity body, high acidity and saline chalky mineral qualities. Absolutely delicious, good now and I suspect for many years. The more full body compared to many Chablis might make it less typical as noted below, but also gives it even more food versatility and I paired it with a quite mediterranean leaning fish dish which it complemented really well. Will probably hang on to my second and last bottle for a few years.

HDH auction at Spiaggia; 6/22/2018-6/23/2018 (Chicago, IL): I know this is low sulphur, but it's pretty stanky and smells like, well, sulphur. I love the palate here -- far more than the nose. The palate is mineral and lemon, and it's pretty much classic, steely chablis. A nice hint of fruit to balance the acidity, and the texture here is lean, but absolutely correct for chablis. Great stuff -- I should probably pick up a few of these now and again.

Terrific young Chablis from Thomas Pico. The aromatics are initially reticent, takes some airing out. Wind feel wound up, but slowly reveals a vibrant energy with citrus fruit, richness on the palate, but buffered by crisp acidity that enlivens everything. A salinity comes forward on the finish that sails on leaving an impression. A bit of a wow wine that I want to see again in 3 years and more.

Served with scallops seared in bitter, this was a perfect match. Lemony, saline, distinctly salty and long on the finish, I ended up more interested in the wine than the (perfectly cooked by me) scallops. Beautiful and captivating wine that is frustratingly hard to source!

À l’aveugle, offrande de Derek. Servit un peu froid au départ, j’avais casiment exclus l’option que ce vin aurait pus être un chardo. Quelqu’un mentionne que ceci pourrait être un chablis, malgré des arômes dominantes d’agrumes, mangues, pêches. Une fois réchauffé, le vin se rapproche du chardo, l’élevage est discret, acidité légère, texture légère et petite final chablis. Un style particulier, le vin est bon mais pas un coup de coeur pour moi comme pour certains d’autres!

Robe jaune paille avec un peu de nuances argentées.
Le premier nez très frais sur des notes d'agrumes, de fruits à chair blanche, de fruits séchés et d'épices. À l'aération, le vin gagne en précision et en définition pour révéler des arômes de zeste de citron, de pomme verte, de pêche blanche, de fleurs et de noix (amande, noisette).
En bouche, les arômes sont semblables à ceux perçus au nez, l'acidité est vive, la persistance aromatique est assez longue et la finale est succulente, en fraîcheur, et me rappelle un peu la crème de citron.
Parmi les meilleurs premiers crus du millésime 2014 que j'ai goûtés. Il ferait la barbe à plusieurs crus de la Côte de Beaune vendus beaucoup plus cher!

O.M.G mais quelle finesse ! Les produits du domaine Pattes Loups sont excellent. Une fraicheur impeccable, une acidité tranchante, un gout de limonade fraichement pressé. C'est merveilleux et c'est a boire maintenant. Aucun intérêt a laisser vieillir ce Chablis et prendre la chance de perdre ce citron frais avec les années. Absolument DÉ-LI-CI-EUX ! J'en rachète une pour une journée 30 degrés et piscine cet été.

Nose bright with minerality of wet slate and chalk dust. Some brioche. Taste is green apples, lemon zest, triple creme cheese, and a saline finish. High acidity. Loses nothing over 3 hours + decanted, and develops browned butter and clay. Long mineral finish. Simply excellent.

Le premier nez très frais sur des notes d'agrumes, de fruits à chair blanche, de fruits séchés et d'épices. À l'aération, le vin gagne en précision et en définition pour révéler des arômes de zeste de citron, de pomme verte, de pêche blanche, de fleurs et de noix (amande, noisette).
En bouche, les arômes sont semblables à ceux perçus au nez, l'acidité est vive, la persistance aromatique est assez longue et la finale est succulente, en fraîcheur, et me rappelle un peu la crème de citron.
Parmi les meilleurs premiers crus du millésime 2014 que j'ai goûtés. Il ferait la barbe à plusieurs crus de la Côte de Beaune vendus beaucoup plus cher!

O.M.G mais quelle finesse ! Les produits du domaine Pattes Loups sont excellent. Une fraicheur impeccable, une acidité tranchante, un gout de limonade fraichement pressé. C'est merveilleux et c'est a boire maintenant. Aucun intérêt a laisser vieillir ce Chablis et prendre la chance de perdre ce citron frais avec les années. Absolument DÉ-LI-CI-EUX ! J'en rachète une pour une journée 30 degrés et piscine cet été.

Nose bright with minerality of wet slate and chalk dust. Some brioche. Taste is green apples, lemon zest, triple creme cheese, and a saline finish. High acidity. Loses nothing over 3 hours + decanted, and develops browned butter and clay. Long mineral finish. Simply excellent.

During a merchant tasting. A step up from the Butteaux. More refined palate, complex aromas of apple, mineral. Good finish. Very nice Chablis that is fresh but also has mid mouth volume.

Klar, strågul. På nese voks, litchi, røde epler, stjernefrukt og hint av nellik.
Syrefrisk, spenstig og aromatisk, eplepreget frukt med med god dybde og konsentrasjon. Frisk, spiss syre. Tørr utgang med mineralsk anslag. Sitter svært lenge i. Karaktersterk vin.
