Medium sweet, high alcohol, med(+) acidity, full body, long finish. Complex and fairly long finish. Well balanced though alcohol feels a bit high. Tasty. 91/92

A PX sweetened Palo Cortado aged for 30 years. Toothsome and complex, with flavours of toffee, raisins caramel and nuts. Medium-dry and never cloying, it’s nicely balanced by a bitter twist developing superbly on the palate through to an impressive lingering finish. CHP 91pts

Gonzalez Byass Sherries: Deep amber color. Aromas show apricot jam, baked apples, glazed pears, along with honey, graham cracker and salted almond. Rich, full and suave but fresh, too. Flavors of sweet yellow plums along with complex notes of candied ginger, maple syrup. There’s a combination of sea salt and salted almond that is really intriguing. Rich but nervy, and totally delicious. Made from Palomino with 13% Pedro Ximenez. 20% alcohol and 50 grams/liter of residual sugar.

Heaps of figs, dates, and nutty richess, it teases you with the impression of sweetness, while dispensing that game and showing incredibly dry savoury qualities that seem to linger for ages. Delicious.
