Well cellared Chablis is one of the best things in wine. This speciemen is a prime example: fresh as a daisy with lovely mix of citrus, salt, brine and chalk, supported by somewhat sweeter and softer notes of pear and apple and a lovely complexity underneath it all with just hints of cheese rind, butter and bisquits. This is far from tired and with additional cellaring those secondary and tertiary impressions will gain in intenisty. For me perfect balance right now so will drink the remaining bottles over he next couple of years.

Plenty of lemon, lemon curd and lemon peel with clear Grand Cru density. Also impressive length with a minerally finish. Starting to show some signs of maturity, enjoy over the next five years.

Adieu Domaine Dublère Dinner (Monnie Burke's): In 07/08/10/12 vertical. This continues to be such a great wine. Plenty of apple and lemon with very good concentration and so much nuance here. In its peak drinking window, but this will also drink well for many years going forward. For me, the 2010 edged this out as best wine of the flight and night, but it was close.

This bottle might be a little off, though it does have some similar characteristics to a bottle 5 years ago. It's a bit flabby with med- acidity, has some ripe apple aromatics and flavors but not very complex.

Blind Chablis Tasting (River Forest, IL): Tasted blind in flight. Lemon and lemon drop nose and palate. Slightly riper aromas vs flavors, while overall very clean, long and elegant. Very good now. My 4th favorite of the tasting, the group's #3.

Mercy, is this good. Restrained oyster shell and butterscotch nose. On the palate, there is oil, flint, tart yellow apple, and minerally brine. Is this cru Puligny or is this Chablis? Shockingly good juice. Bottle #4 from a six pack -- this is only getting better with bottle age.

The characteristics of Domaine Dublère's Chablis Grand Cru Les Preuses from 2008 did not remind me of a Chardonnay from Chablis region. On one hand its flavours were mostly exotic and a bit fattening an on the other hand its acid was surprisingly mild (especially for 2008). To me there wasn't so much Chablis in this Chablis. Anyway, undoubtedly a very decent Chardonnay

"Wines mostly from lime stone" (Chris Home): Nose: Not a typical Chablis nose, more modern in style. Very ripe fruit like pineapple, mango and a bit of vanilla. With more time in the glass you get more of a floral and a cauliflower note. Palate: Good acidity, nice calcareous note which is so typical for Chablis. Much more mineral driven than the nose. Lovely citrus component on the finish. You can enjoy this wine now, don´t think that its a must to cellar it for several more years.

Wine with Steak and Morels (Chez Kailin - Northbrook IL): Tasted blind. While clearly ripe, it also came across as very Burgundy in style and fruit profile with lots of apple, lemon, lemon custard and subtle baking spice. Good acidity but with minerality slightly in background today behind robust fruit. Consistent with prior bottles.

Sophisticated and complex Chablis with a nose of stone fruit and lychee. Round, soft and delicate on the palate with subtle hints of lemon/citrus and wet stone. Comes alive with food pairing.

This has never showed better. Nose is pure saline, shells, citrus zest, and white stone fruit. Soft, elegant, and almost feminine on the palate with flavors of citrus, crispy apple, and slate. Youthful with such great balance.

PopnPour, tasted over 1 hr -med gold -ripe yellow fruits, tiny funk -med- acidity, very ripe yellow fruits, saline, decent minerality, round, ok length -lacks the zippy acidity of most '08s, no definite prem-ox, probably needs more time

Chablis 2004 Shootout...Raveneau, Dauvissat and Fevre...Top Vineyards (L2O - Chicago IL): Tasted single blind alongside Fevre and Dauvissat 2004 les Preuses. I added this as the mystery wine in the flight because our group has had it several times over the past few years and have always been impressed. Fresh aromas of ripe apple and pear. Same fruit on palate, very bright and balanced with good spice emerging on finish.

Blind Chablis Tasting (Chez Kailin - Northbrook IL): Tasted blind. Intense ripe apple aromas to start. Similar on palate with some pear flavors as well. Great density, long and powerful. Good acidity, lots of minerality on finish. Very balanced already, I thought it a few years older than 2008. This is the 4th or 5th time I've had this wine, and somehow it surprises me every time with its exceptional quality. Almost everybody's Wine of the Flight.

Really cool Chablis. Nose is full of exotic flavors. Palate at first is quite soft -- luscious, round soft fruit. Could be from another region in Burgundy other than Chablis -- like a really good Chassagne. Then with some air and time, the juice becomes bracingly acidic, chalky, mineraly, oystery, and lean. Pineapple amd lychee. Complete transformation. The nose is still exotic with a little botrytis. I practically have cottonmouth following the last sip a few minutes back. This will age nicely, I am sure.

Domaine Dublère Cellar Visit and Tasting (Savigny-lès-Beaune): Tasted at the domaine, immediately following the 2007. This is more classic with plenty of lemon, lemon peel, green apple and outstanding mineral textures. The two vintages are both excellent, but a sharp contrast in style.

Both 2008’s: Dublère Chablis Grand Cru Les Preuses and Louis Michel Chablis Grand Cru Les Clos.
Preuses better on night one, w fuller body and more available fruit. Michel better night 2 in a cleaner lively more crisp style.
Both were delicious but neither outstanding.

Gros Family "Reunion" with Richebourg and Clos Vougeot++ (Boka - Chicago IL): Tasted double blind. Very crisp, precise and linear. This shows lemon flavors from the first sniff through the finish with sharp, focused minerality. Intense fruit on finish.
