When the cork came out of this, I wasn't overly hopeful. An oxidative, flat-ish nose. But cool this down a bit, give it 30 minutes of air, and throw it into a Burgundy glass - you've got a different wine entirely. Beautiful, white peach, lily, and loads of mineral. The mousse has mostly gone but it's a delightful, elegant old Champagne.

Magnum. Big buttery brioche, deep rich palate, bruised tropical fruit like mango and papaya, with sweet honeycomb throughout. Intense and focused on the palate if somewhat subdued aromatics. Honeycomb dominant. Hints of lime and young citrus present towards the end.

Just killer. A beautiful bottle of bubbles which got a lot of compliments from the crowd. Balanced acidity and a bright purity which brought me to empty my glass in record time. Wow
