Get it double-blind. Firstly not surely detected as a Chablis/Burgundy. Still a phantastic acidity structure, some nuts, a brialliant acidity and clean finish. A great wine which Needs time in the glas. Not reached his top but Close to it. 94-95

After so many poxed bottles, it is wonderful to be reminded how great mature white Burgundy can be. Having a producer of Raveneau's calibre obviously helps. Colour was medium gold. Right upon opening there was a wonderfully complex aroma of white fruit, flowers, minerals and honey with just a hint of cedar. The palate was medium bodied at most but mouth filling, long, beautifully harmonious and complex with a replay and variations on all the aromas from the nose as well as notes of smooth stones which reminded that this was Chablis, fresh but caressing acidity and suave texture. Together with fresh scallops from la Foire aux Coquilles St.Jacques and then Sainte-Maure goat cheese, this was a simple seeming but almost perfect dinner. Excellent wine but what a shame that it is such a lottery to get a bottle like this.

Winemaker's dinner: Raveneau & Mugnier (Onda Mezzanine, Oslo): Steinete nese. Noe støv, honningtoner, mildt innslag av mango og mandarin, vaniljesukker og hint av voks og harpiks. God fylde. Glatt, viskøs og bløt frukt med god konsentrasjon og power. Frisk og ungdommelig for alderen. Noe varm. Lang ettersmak med toner av smør og en mild bitterhet.

Clos Rougeard Breze and Le Bourg and some friends (905 Fahrenheit aka 485° Düsseldorf): Had it twice before but even not detected this time as a Chablis. I guessed younger around 2002. Wet stones, decent lime notes. Balanced and with a subtle density but in my opinion a touch too austere even it is a great Chablis. 94
