Still ripping acidity but with that bruised apple note that comes with age. Color is deepening to a honey golden but the acidity keeps things very fresh. Not sure where this goes. I assume 5 years wouldn’t hurt at all but it sure is good now......

Slightly chilled. Deep yellow in glass. Lots of wool and lemon on open, definitely opened up and morphed over course of evening. Bright acidity, with light honey, pear, floral/herb palate, good length and body. And wow, the acidity delightfully dueled with the lemon/pear/light mineral flavors as wool receded--balanced but with a nice complex expression of tension. Served with halibut baked with hazelnut/grain mustard/butter glaze in white wine/thyme braise. Excellent complement and fine meal.

Pop and pour at cellar temp. Wonderful as it warmed a bit. Nose showing loads of lemon, cool herbs and a hint of oxidation. The oxidation disappears with time open and transitions into something a bit smokier. On the palate, just fantastic, bright acidity...loads of lemon and herbs with a very refreshing finish. I'm not really doing justice to the complexity of the nose...that really did it for me...paired with various cold salads/slaws.

Worked well with local halibut & fennel confit. Retsina-like, herbaceous character became richer with time. A lot of time ahead for this bottle.
