Clear medium yellow with scant very fine bubbles. Notes of chamomile, Meyer lemon zest, apple cider, almond biscuit, sherry, green tea and ginger. Not unlike a fine, well aged champagne.

New Years eve at Kevin and Vicki's 2018: No one will mistake this for a champagne. The only similarity is a whiff of yeast on the nose. There is no toasty aspect to the palate. Oxidative, with a very dry palate of green apple and apple skin.

New Year's Eve Bash (Rocknroller's (Kevin & Vicki's Place)): Light medium gold color. I had a couple bottles of this myself that I drank back 5 years ago. This bottle was in good shape, but I don't really think age is serving wel at this point. There's a little yeast on the nose and it has some good minerality as well. The palate is a bit more austere offering a more oxidative character, apple and apple skin. I like this and truly appreciate the complexity and structure, especially for Cava, but this has gone past the ideal window and I would suggest consuming these myself. 89 to 90pts.
