  An utterly compelling drink from the first to last mouthful. Nail biting tension with grapefruit and lemon pith acidity. Salty minerals and leesy wet straw with a grippy, pithy texture. So much energy, complexity and concentration. I could weep. Memorable.

  I previously accessed this with Coravin and directly on pour, and very cold, I thought that it had lost too much fruit while retaining the acidity. Opening what was left of the bottle and letting it sit in the glass, gaining temperature, I am changing my opinion. Shows loads of salty minerals to go with red apple and lemon, high in acidity but also leesy and creamy. Quite nice to drink, especially with some charcuterie or cheese. Definitely not a conventional burgundy so don’t drink it as such i.e. with white in creamy sauce or browned butter and the like, hit it with something salty and fat as companion.

  Per chi ancora crede che dal comune più a sud dell' AOC di Pouilly-Fuissé nascano solo vini rotondi, morbidi e calorosi....
  Nonostante l' annata solare Valette riesce a distillare un concentrato di buccia di limone con i suoi oli essenziali che si diffondono finissimi e impalpabili, per proseguire con un tocco minerale e fresco, senza ombra di legno, sovraestrazioni né alcool.
  Simbolo di smilza purezza, che resta dal lato magro della bilancia, che ancora una volta ricorda quanto siano vicini Macon e Chablis.
