  • My Birthday lunch at Les Amis. Deep gold, almost identical in appearance as the Dom Perignon 1982 drank alongside. This had soft floral aromas on the nose, very elegant, touch of olive oil, wet stone, grass and minerals. Lack of acidity made this a little less structured, but still with the lovely characteristics of a good Chevalier. White peach, mangoes, pineapples, honey, salted popcorn, truffle and a touch of mint. Again, I happened to think we have caught this at the peak drinking window. Lovely wine.
