I last left a note on this wine in April 2020 - 3 years ago! That was my first of the case and this is my fifth. I’ve no idea how I will open the precious final bottle as this wine is an absolute treasure. Completely what I want from a Chardonnay - richness but in balance with the fruit and the acidity. This has massive length. Definitely not an aperitif wine - this needs a food pairing. I had this with lamb chops with roast cauliflower and a tomato and onion salad and it was prefect. I think this is a great match with grilled meats when you want a lighter pairing than a red wine. Need to buy more of this!

Last bottle and nearly 3 years since the previous one. I wasn’t sure how these would age but it’s in a decent spot, almost calmed down. I still get that savoury finish but more dry than bitter - good power and length. Not quite as opulent . Good

My first bottle of Paul Lato wine and definitely not the last. This reminded me of a single vineyard Kistler bottle, showing a hint of sweet butter to accompany the lemon, baked pear, and apple notes. Well balanced and delicious.

Tropical fruit and spice notes from the well integrated oak delivers well balanced Chardonnay. Great depth and texture. Somewhat round but a light vein of acidity tries to enter the show at the end. Aromatically stimulating. This is consistently one of the best Chardonnays from the Central Coast. Good juice.
