Day 1 was really nothing special. Quite chaulky, spicy, not much fruit, a touch bitter. I tried it again a few days later and it was about the same. Then I forgot about it for a week. Upon revisiting, it had morphed into a pretty decent sauternes. Nectarine, honey, still spicy chaulky borytis, but it more complete this time. I may not have given this bottling enough credit - I thought I should drink them up but clearly they still have more to tell.

A nice enough midrange Sauternes. The typical honey, apricot, almond are all here. Not super sophisticated, doesn't have the botrytis notes at the front, but it was pleasant with sorbet and tuile cookies.

Popped and poured. It's definitely a few steps down from a good vintage and a good Sauternes house. Lacks finesse and is a little too sweet. I will give my remaining 2 bottles a couple years before trying again.

Honey and apricot jam on the nose. The taste has honeycomb, apricot jam and pineapple actually reminds me quite a bit of the Macallan Marmalade if you were to melt it down into a liquid. It's not cloying like alot of ice wines but still pretty sweet. Mouthfeel is medium-bodied, enough to coat the tongue and not feel like water but not enough to feel like syrup.

Breathe in the dried apricot. Slurp the mixed stone fruit. Linger with the candied orange peel.
