Tasting at Château Pichon Baron. Matured fruit character, mushrooms, forest floor, cedar, mineral, savoury. Soft tannins, firm acidity, long lingering finish. Tertiary development. A Powerful wine with presence. Magnum bottle. 74% Cab Sauv, 26% Merlot.

Neil Martin is so right about off vintage Claret in Bordeaux. These wines mature faster than the great vintages and offer up more immediate pleasure while you wait for the legendary vintages to evolve to a similar spot. For example, the ‘07 is drinking better right now than 2000, 2005, 2009, and 2010. At this stage, this wine is squarely in my wheelhouse. Pauillac goodness in the glass with loads of black fruit, camphor, cedar, black licorice, and creosote. Decanted for 1 hour and consumed over an additional 2 hours. In a great spot now. Unfortunately, it was my one and only bottle of the 2007.

Phenomenal! Such depth, balance, power yet velvety. A blend of 60 % CS, 35 % Merlot, 4 % CF & 1 % PV: bell pepper, plum, cherry, tobacco, leather, soft oak, blackcurrant, cedar, cigar box, pencil shavings, medium to full body, long persistent finish.
