Great bottle condition. Nose of dark plum, dark cherry, Katsuo, barnyard. Fruits are still alive on the palate which is just as well since you can’t escape those 1975 tannins. Popped and poured this which was a great decision - it fell away after an hour but was still a joy to drink for the 3 hours or so of dinner. Overall, I’m a big fan of 75s - you I’ll get some dried out bruisers but the tannins maximize your chances of finding wines still alive at levels.

Friday Dinner at Jules Bistro (Jules Bistro, G/F, King-Inn Mansion, 13-15 Yik Yam Street, Happy Valley, Hong Kong): Popped and poured from Chef's private cellar.....totally transparent but still bright and jewelled ruby gemstone colour. Nose is lightly perfumed elegance....like a rosewater-based Spanish perfume rather than a French oil-based perfume.... the lightness of texture on the nose is more a feature than the component ingredients, but there is nothing tertiary or fading here. Palate is equally bright, fresh and elegant although fully mature and likely to fade in the next few years. Lighter and more elusive than the L'Evangile 1979 we drank before it but still a real joy. Gosh.....

Drinking surprisingly well given the vintage. Fully mature with nice red berry fruit integrated into the oak. Nice ancient nose, but a little thin on the mid palate.

Retailer tasting (@ GT in R): This was a nice surprise. Very mature wine, but still very much alive. In the bouquet some pleasant barnyard, herbs and spices as well as pleasant tertiary aroma’s. On the palate a good balance between the acidity and a touch of sweetness, completely melted tannin, some earth, tobacco and autumn forest. Really nice with good complexity.
