Don't you love it when the aromas follow the cork right out of the bottle, filling the room. This one did: white flowers, honey, peach and a waft of vanilla/oak (no oak on the palate, thankfully). Color was a clear, deep golden yellow with a touch of green overlay. Full, but cleansing, mouthfeel featuring a satisfying amount of fruits and acids with some minerality. A hint of nuttiness on the finish, but maybe not as much as others that I've had.
We served this with sauteed shrimp over saffron basmati rice and it matched well. Ribolla also matches well with cheese we and had some Manchego on hand which goes well with olives, so I applied the transitive law of equality and finished dinner with Ribolla and marinated olives. This was a delightful--and unexpected--combination. Upped the score on the wine by two points.
I think that Ribolla can age well, and this bottle was quite fresh, still I would suggest drinking these in the next year.
