Having had Chevillon's 88 NSG village a couple of years ago, I always figured that this would need more time, but couldn't resist the urge to finally open my oldest Burgundy bottle in my cellar. Even though this is accessible and enjoyable tonight, it is at least 5-10 years away from its peak. Blind, I think I would have guessed 10-15 year old Barolo and not have gone the burgundy way. The wine has firm slightly drying tannins, acidic structure and a dark red fruit and forest floor profile on the palate that I tend to find in Piedmont. Certainly a lot going on the palate as there is also tar, sweet licorice and amaretto. This paired very well with our steak and everyone liked it. While deep down inside I had been hoping for more of a wow factor, I am certainly happy with the way it showed and would love to have it again in 10 years as I feel that this wine has more to give.
