Lovely expression of older NSG. Some funk had to blow off for 30-60 minutes but once it did, this showed how Chevillon can age and show well it off years. Started off with a slightly weird taste that needed to blow off, but once it did, it showed the lovely NSG backbone and structure, still some good fruit and a nice subtle mushroomy flavor. Definitely alive and kicking, although my guess is that it's probably part way through it's downslope. It went really well with grilled snapper, which surprised me a bit actually.

Full, deep, mature garnet color. Meaty, gamy, stinky wild cherry nose with touches of iron. Rather thin on the palate, with a touch of sweetness that may indicate chaptalization. Hollow, sinewy and somewhat tough with drying tannins on the finish. An interesting period piece with beguiling aromatics, but, overall, not a great Chevillon.

I opened it to let it breath for 4 hours. Tasting it every 30 minutes, the fruit never came. Very thin. I think it is past it's prime.
