 Tasted by ID on 8/20/2023: Last bottle was by far the best. Don’t know if it was the extra bottle age or if it was the relatively warm temperature at which we drank this. Drank with a richness that was lacking in prior bottles. (284 views)

N:Medium (+) intensity. Apple, lemon curd, butterscotch, wet stone
P: Aromas confirmed. Stone very apparent now. Dry, medium (+) acid and body and intensity and finish. Medium alcohol (+)
C: Balanced, good length and intensity. However, i am lacking descriptive clusters here and so not complex. Very Good Quality wine.

Medium weight and focused on the palate with a precise and chiseled personality. Juicy tangy acidity provides lift and persistence. Yellow orchard fruits balanced by saline and mineral on both nose and palate - very fresh with good balance. Lacks the intensity, complexity and long finish of a Grand Cru Chablis, but this is a great "junior" version; it is interesting, really pleasing and offers amazing value for the quality it offers. My local wine warehouse sells it for $23 / bottle and I plan to buy more. (1685 views)

 Tasted by dgkula on 1/29/2015 & rated 90 points: Adding a point for QPR. This is a very good 1er Cru Chablis at a great price point. On bottle 11 of a case and will buy again without a doubt. Nose of matchstick, iodine and herbs. Briny taste with lemon pith and a nice bite. Good minerality and acidity. Really a pleasure; consistent bottle to bottle and no funk - compares extremely well to the other cases of Chablis I have drank this season from other producers (Moreau, Picq) although those have been village bottlings they have been inconsistent, watery and had funk. Medium bodied, great acid and balance, a beautiful arc across the tongue, great texture, a touch vinous, some sweetness, clean. Good weight and depth as one would expect from a 1er Cru. I suspect a few more years in bottle will round this out. On a personal level, I think Chablis and Chardonnay are beginning to bore me. Great at $25, not so much at $30. Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet

The 1er Cru Cote de Lechet is home turf for Domaine Bernard Defaix - their winery and cellar is just at the base of vineyard hill in the village of Milly, they are the largest landowners in the cru, and the only certified organic grower there.

The wine itself is racy, yet layered ,with yellow stonefruit flavours bouncing around with crunching citrus and pebbly minerality. There is a small percentage of old oak used but this is a linear, pure style, not a Cote de Beaune wannabe.
Defaix is based in the small village of Milly, on the left bank of the Serein river that divides the Chablis. The Domaine is now run by Didier, son of Bernard, and his wife Helene, and comprises approx 25 hectares across Petit Chablis, Chablis, 1er and Grand Cru sites.

An early convert to organics, the wines are pure, clean but also have weight and texture that is oft lacking in basic Chablis.
We cultivate 8 hectares of this Premier Cru located on the slopes of the village Milly and on the right backs of the river Serein. We are the biggest owners of this cru.

When some of the plots were planted, we found impressive fossils of exogyra virgula that had been perfectly preserved. The remarkable stony and sunny soil is captured in this powerful and complex wine. It flourishes with age and expresses mineral aromas reminiscent of gunflint. The Côte de Lechet is indeed one of the Premiers Crus of the Chablisian vineyard with the most exceptional ageing potential.

Burgundy - The province of eastern France, famous for its red wines produced from Pinot Noir and its whites produced from Chardonnay. (Small of amounts of Gamay and Aligoté are still grown, although these have to be labeled differently.) The most famous part of the region is known as the Cote d'Or (the Golden Slope). It is divided into the Cote de Beaune, south of the town of Beaune (famous principally for its whites), and the Cote de Nuits, North of Beaune (home of the most famous reds). In addition, the Cote Chalonnaise and the Maconnais are important wine growing regions, although historically a clear level (or more) below the Cote d'Or. Also included by some are the regions of Chablis and Auxerrois, farther north.

"... a hybrid of 2004/2007 and 2010. The stone, citrus and limestone amalgam is exactly what we search for in Chablis as the style harkens to a day in the Cote de Beaune proper (1960's - 1980's) when wine was not meant to be consumed the week it was released, battonage was not used by all and new oak was rarely seen ... the texture is natural and 'of the vintage' not 'of the winemaker' .... Like Sancerre or the Loire in general, 2014 in Chablis is one of those rare years with extract and transparency. It appears to be a vintage for the "neoclassic" ages and those of us intent on cellaring the most terroir-driven (but still powerful) examples of vineyard, site-place and varietal will want to invest (heavily) in the magnetic and electric 2014's." - Jon Rimmerman

2018 Vintage Notes:
"There’s not that razor sharp Chablis acidity in 2018,” says Patrick Piuze. “But there is good definition of place. The dry conditions drove vines to drink deeper down in the soil profile."
