 Tasted by gtilley on 4/8/2022: Deep gold, nose is almost semillon like with wax and orange zest. The palate is loose, it glides across the palate, with wet hay and wet rocks, a light honeycomb note. It lacks a certain degree of persistence or concentration nevertheless it represents mature yet fresh Chablis that I would gladly drink any time. (390 views)

Very traditional Chablis that will benefit from 3-4 years of cool cellar temps (decanted for 2 hours with notible improvement). Drank with a meal starting with raw oysters, Arugula and Pear Salad with a lemon-dijon dressing, and grilled halibut. No regrets here. (2960 views)

A very light style with higher acidity, and flavors in waves: lemon > pear > white nectarine. Refreshing and easy . . . makes me wish I had a pile of oysters to go with it! Salud! POSTSCRIPT: The longer this wine was open, the weaker it seemed to get. By the end of the bottle, it was thin, thin, thin. I'm revising my initial 88 down to an 85. (2812 views)

 Tasted by Pknut on 8/20/2009: So Burghound gives this wine 90-92 points and a good review. Vaynerchuck disses it completely, giving it 75 points and calling it something like thin lemon water (I'm paraphrasing since I really don't want to have to watch WineLibrary TV any more than I have to). Putting aside the silliness of points, it's the disparity between the two opinions that is interesting. Credit to Gary for ripping a wine that he sells (but, on the other hand, perhaps its a wise tactic for a retailer to occasionally slam a wine that he sells, thereby adding at least the impression of disinterest or "credibility"), but I think Gary got this one wrong. Gary tasted it along with a bunch of New World whites, so perhaps that affected his palate. In any event, that context aside, I liked this wine. There is an initial burst of sweet-sour tangy acidity that makes the mouth wake up. The entry is clean and pure, with the impression of fresh water more than sea water, and a touch of Chablis wooliness in the back. Good acidity, but could use more definition. I found it difficult to not sip this wine. Not the most complex wine, but it's quite drinkable and quite satisfying, especially at this pricepoint. (1520 views)

Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet

The 1er Cru Cote de Lechet is home turf for Domaine Bernard Defaix - their winery and cellar is just at the base of vineyard hill in the village of Milly, they are the largest landowners in the cru, and the only certified organic grower there.

The wine itself is racy, yet layered ,with yellow stonefruit flavours bouncing around with crunching citrus and pebbly minerality. There is a small percentage of old oak used but this is a linear, pure style, not a Cote de Beaune wannabe.
Defaix is based in the small village of Milly, on the left bank of the Serein river that divides the Chablis. The Domaine is now run by Didier, son of Bernard, and his wife Helene, and comprises approx 25 hectares across Petit Chablis, Chablis, 1er and Grand Cru sites.

An early convert to organics, the wines are pure, clean but also have weight and texture that is oft lacking in basic Chablis.
We cultivate 8 hectares of this Premier Cru located on the slopes of the village Milly and on the right backs of the river Serein. We are the biggest owners of this cru.

When some of the plots were planted, we found impressive fossils of exogyra virgula that had been perfectly preserved. The remarkable stony and sunny soil is captured in this powerful and complex wine. It flourishes with age and expresses mineral aromas reminiscent of gunflint. The Côte de Lechet is indeed one of the Premiers Crus of the Chablisian vineyard with the most exceptional ageing potential.

Burgundy - The province of eastern France, famous for its red wines produced from Pinot Noir and its whites produced from Chardonnay. (Small of amounts of Gamay and Aligoté are still grown, although these have to be labeled differently.) The most famous part of the region is known as the Cote d'Or (the Golden Slope). It is divided into the Cote de Beaune, south of the town of Beaune (famous principally for its whites), and the Cote de Nuits, North of Beaune (home of the most famous reds). In addition, the Cote Chalonnaise and the Maconnais are important wine growing regions, although historically a clear level (or more) below the Cote d'Or. Also included by some are the regions of Chablis and Auxerrois, farther north.

"... a hybrid of 2004/2007 and 2010. The stone, citrus and limestone amalgam is exactly what we search for in Chablis as the style harkens to a day in the Cote de Beaune proper (1960's - 1980's) when wine was not meant to be consumed the week it was released, battonage was not used by all and new oak was rarely seen ... the texture is natural and 'of the vintage' not 'of the winemaker' .... Like Sancerre or the Loire in general, 2014 in Chablis is one of those rare years with extract and transparency. It appears to be a vintage for the "neoclassic" ages and those of us intent on cellaring the most terroir-driven (but still powerful) examples of vineyard, site-place and varietal will want to invest (heavily) in the magnetic and electric 2014's." - Jon Rimmerman

2018 Vintage Notes:
"There’s not that razor sharp Chablis acidity in 2018,” says Patrick Piuze. “But there is good definition of place. The dry conditions drove vines to drink deeper down in the soil profile."
