Tasted by Mame & Tha on 4/30/2011: Almoço no Sal; Tha e Gatao. (3031 views)
Tasted by jahlove on 11/9/2010 & rated 89 points: Last bottle of 4. Wonderful nose, reminiscent of the sea shore, but also some ripe white fruit tones and then a little bit of citrus squeezed on top, maybe a little hay as well. It's a 90+ nose. Palate starts of strong with nice buttered lemon and then the acidity takes over on the back end. Finishes a touch short, keeping it out of the outstanding range. But this nothing to turn your nose up at. It's still classic Chablis prem cru at $20. As others have pointed out here, this will paire well with sea food, particularly shellfish, either raw or done lightly. Will not stand up to a heavy sauce though. (2931 views)
Tasted by yeti575rider on 2/28/2010 & rated 88 points: Nothing special but nice balance and acidity. Miinimal oak as expected but this is always a plus in my book. Overall enjoyed it as it went nicely with dinner. (3441 views)
Tasted by Xavier Auerbach on 2/27/2010 & rated 92 points: Minerally, intense, salted butter, elegance and power, very good. (2453 views)
Tasted by stephen locke on 1/30/2010 & rated 90 points: This was singing - wonderful complexity with the unoaked mineral crispness supporting the weight of the ripe chardonnay. Best bottle yet. (3227 views)
Tasted by Rubinstein on 8/11/2009 & rated 89 points: Good Chablis. Not too oaky.Worked nice with seafood. (1692 views)
Tasted by gbauer on 4/19/2009: Not great. Heavy on the yeast and not much else. Okay with food, but glad it's my last bottle. (1618 views)
Tasted by jahlove on 3/28/2009 & rated 89 points: Not as enjoyable as the first bottle. The acid seemed to dominate and the wood, although still very much in the background, was more noticeable than I remember. Still willing to give this time though. (1606 views)
Tasted by Eugene on 11/28/2008 & rated 90 points: Creamy, great minerality and mouthfeel. (1661 views)
Tasted by amgryger on 11/2/2008 & rated 88 points: Very light platinum gold color in the glass with no rim variation. Moderately open nose with aromas of apple, pear, lemon and hints of creme brulee. I noted that the nose opened up a bit more with time. Medium bodied on the palate with apple, pear, charismatic minerality, lemon curd and creme brulee. Medium long finish with an elegant mouthfeel and very well integrated high acidity, but the wine comes up a little short on focus. It's like a really well composed photograph that was taken at f2.8 when it should have been taken at f8 to get the depth of field it really wants. That said, it's a chardonnay that I can get into, neither lean and auster, nor flabby and buttered. (1666 views)
Tasted by Teamcrev on 9/8/2008: My first impression is that this will benefit from age. (1642 views)
Tasted by isaacjamesbaker on 7/25/2008: really liked this. big and powerful acidity, but it had ripe fruit as well and a nice amount of subtle toast. (1665 views)
Tasted by Claret on 7/18/2008 & rated 91 points: Highly detailed, fine Chablis from Defaix. Wow. This one is a keeper. Love it! (1732 views)

Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet

The 1er Cru Cote de Lechet is home turf for Domaine Bernard Defaix - their winery and cellar is just at the base of vineyard hill in the village of Milly, they are the largest landowners in the cru, and the only certified organic grower there.

The wine itself is racy, yet layered ,with yellow stonefruit flavours bouncing around with crunching citrus and pebbly minerality. There is a small percentage of old oak used but this is a linear, pure style, not a Cote de Beaune wannabe.
Defaix is based in the small village of Milly, on the left bank of the Serein river that divides the Chablis. The Domaine is now run by Didier, son of Bernard, and his wife Helene, and comprises approx 25 hectares across Petit Chablis, Chablis, 1er and Grand Cru sites.

An early convert to organics, the wines are pure, clean but also have weight and texture that is oft lacking in basic Chablis.
We cultivate 8 hectares of this Premier Cru located on the slopes of the village Milly and on the right backs of the river Serein. We are the biggest owners of this cru.

When some of the plots were planted, we found impressive fossils of exogyra virgula that had been perfectly preserved. The remarkable stony and sunny soil is captured in this powerful and complex wine. It flourishes with age and expresses mineral aromas reminiscent of gunflint. The Côte de Lechet is indeed one of the Premiers Crus of the Chablisian vineyard with the most exceptional ageing potential.

Burgundy

Les vins de Bourgogne (Bureau interprofessionnel des vins de Bourgogne) (and in English)

Burgundy - The province of eastern France, famous for its red wines produced from Pinot Noir and its whites produced from Chardonnay. (Small of amounts of Gamay and Aligoté are still grown, although these have to be labeled differently.) The most famous part of the region is known as the Cote d'Or (the Golden Slope). It is divided into the Cote de Beaune, south of the town of Beaune (famous principally for its whites), and the Cote de Nuits, North of Beaune (home of the most famous reds). In addition, the Cote Chalonnaise and the Maconnais are important wine growing regions, although historically a clear level (or more) below the Cote d'Or. Also included by some are the regions of Chablis and Auxerrois, farther north.

# 2013 Vintage Notes:
* "2013 is a vintage that 20 years ago would have been a disaster." - Will Lyons
* "low yields and highly variable reds, much better whites." - Bill Nanson
* "Virtually all wines were chaptalised, with a bit of sugar added before fermentation to increase the final alcohol level." - Jancis Robinson

# 2014 Vintage Notes:
"We have not had such splendid harvest weather for many years. This will ensure high quality (fragrant, classy and succulent are words already being used) across the board, up and down the hierarchy and well as consistently from south to north geographically apart from those vineyards ravaged by the hail at the end of June." - Clive Coates

# 2015 Vintage Notes:
"Low yields and warm weather allowed for ample ripeness, small berries and an early harvest. Quality is looking extremely fine, with some people whispering comparisons with the outstanding 2005 vintage. Acid levels in individual wines may be crucial." - Jancis Robinson

# 2017 Vintage Notes:
"Chablis suffered greatly from frost in 2017, resulting in very reduced volumes. As ever, the irony seems to be that what remains is very good quality, as it is in the Côte d’Or. Cooler nights across the region have resulted in higher-than-usual acidity, with good conditions throughout the harvest season allowing for ripe, healthy fruit." - Jancis Robinson

# 2018 Vintage Notes:
"The most successful region for red Burgundy in 2018 was the Côte de Beaune. The weather was ideal in this area, with just enough sunlight and rain to produce perfectly balanced wines naturally." - Vinfolio

Chablis

Chablis (Fédération de Défense de l'Appellation Chablis) | Chablis (Burgundy Wines)

2014 Vintage Notes:
"... a hybrid of 2004/2007 and 2010. The stone, citrus and limestone amalgam is exactly what we search for in Chablis as the style harkens to a day in the Cote de Beaune proper (1960's - 1980's) when wine was not meant to be consumed the week it was released, battonage was not used by all and new oak was rarely seen ... the texture is natural and 'of the vintage' not 'of the winemaker' .... Like Sancerre or the Loire in general, 2014 in Chablis is one of those rare years with extract and transparency. It appears to be a vintage for the "neoclassic" ages and those of us intent on cellaring the most terroir-driven (but still powerful) examples of vineyard, site-place and varietal will want to invest (heavily) in the magnetic and electric 2014's." - Jon Rimmerman

2018 Vintage Notes:
"There’s not that razor sharp Chablis acidity in 2018,” says Patrick Piuze. “But there is good definition of place. The dry conditions drove vines to drink deeper down in the soil profile."
