The palate has notes of baked apple, baking spice, marzipan and a touch of lemon on the finish, along with light acidity & moderate minerality. Coming from a 375ml bottle with a synthetic closure I'd say drink now but if you have a larger bottle with a traditional cork it probably has a few promising years ahead of it. (1876 views)

 Tasted by Phredd on 1/26/2012 & rated 86 points: From a 375. Rich, golden straw in color, it looks like it has more oak than a typical Chablis. The nose is not wildly aromatic, but does have a bright floral and almost metallic bent, with some honey but very little of either oak or fruit apparent. The general impression is of a Southern Rhone blend, and that impression strongly carries through on the palate. The first impression is of a smooth and almost oily texture without strong flavors. However, the mid-palate brings an intense acidity, with powerful grapefruit, lemon, and under-ripe melon. Some of the floral aspect returns on the mid-length finish, and a touch of salty minerality shows on the end, as well. Overall, this is both a bit too plain to stand up to its own acidity, and comes across more as a Southern Rhone than as a Chardonnay from a ripe year. It is reasonably well-made, but to me just doesn't display enough typicity or complexity to be considered anything but an average wine, at best. Allen Meadows really liked this, but I just don't see it. (1144 views)

 Tasted by Rob and Meg on 10/19/2011 & rated 91 points: (From a 375 mL) The aromatics are complex, yielding notes of salt spray, honey roasted nuts, lemon, all with an edge of hay and dried herbs. The palate opens with ripe and focused orchard fruits and a hint of pineapple. A wonderful slate minerality appears on the transition to the mid-palate, and becomes more apparent as the wine evolves. It finishes with a fantastic interplay of mouthwatering lemon acidity, cucumber, and persistent creamy saline. The wines has excellent structure, being effortlessly focused and powerful without losing direction on the palate. This is drinking very well right now, but has the structure to delight for years to come. R&M 91 (1403 views)

Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet

The 1er Cru Cote de Lechet is home turf for Domaine Bernard Defaix - their winery and cellar is just at the base of vineyard hill in the village of Milly, they are the largest landowners in the cru, and the only certified organic grower there.

The wine itself is racy, yet layered ,with yellow stonefruit flavours bouncing around with crunching citrus and pebbly minerality. There is a small percentage of old oak used but this is a linear, pure style, not a Cote de Beaune wannabe.
Defaix is based in the small village of Milly, on the left bank of the Serein river that divides the Chablis. The Domaine is now run by Didier, son of Bernard, and his wife Helene, and comprises approx 25 hectares across Petit Chablis, Chablis, 1er and Grand Cru sites.

An early convert to organics, the wines are pure, clean but also have weight and texture that is oft lacking in basic Chablis.
We cultivate 8 hectares of this Premier Cru located on the slopes of the village Milly and on the right backs of the river Serein. We are the biggest owners of this cru.

When some of the plots were planted, we found impressive fossils of exogyra virgula that had been perfectly preserved. The remarkable stony and sunny soil is captured in this powerful and complex wine. It flourishes with age and expresses mineral aromas reminiscent of gunflint. The Côte de Lechet is indeed one of the Premiers Crus of the Chablisian vineyard with the most exceptional ageing potential.

Burgundy - The province of eastern France, famous for its red wines produced from Pinot Noir and its whites produced from Chardonnay. (Small of amounts of Gamay and Aligoté are still grown, although these have to be labeled differently.) The most famous part of the region is known as the Cote d'Or (the Golden Slope). It is divided into the Cote de Beaune, south of the town of Beaune (famous principally for its whites), and the Cote de Nuits, North of Beaune (home of the most famous reds). In addition, the Cote Chalonnaise and the Maconnais are important wine growing regions, although historically a clear level (or more) below the Cote d'Or. Also included by some are the regions of Chablis and Auxerrois, farther north.

"... a hybrid of 2004/2007 and 2010. The stone, citrus and limestone amalgam is exactly what we search for in Chablis as the style harkens to a day in the Cote de Beaune proper (1960's - 1980's) when wine was not meant to be consumed the week it was released, battonage was not used by all and new oak was rarely seen ... the texture is natural and 'of the vintage' not 'of the winemaker' .... Like Sancerre or the Loire in general, 2014 in Chablis is one of those rare years with extract and transparency. It appears to be a vintage for the "neoclassic" ages and those of us intent on cellaring the most terroir-driven (but still powerful) examples of vineyard, site-place and varietal will want to invest (heavily) in the magnetic and electric 2014's." - Jon Rimmerman

2018 Vintage Notes:
"There’s not that razor sharp Chablis acidity in 2018,” says Patrick Piuze. “But there is good definition of place. The dry conditions drove vines to drink deeper down in the soil profile."
