Community Tasting History

Community Tasting Notes (average 89.6 pts. and median of 90 pts. in 16 notes) - hiding notes with no text

Tasted by short and confused on 12/26/2023: much better than the village bottling. $36 vs $27. (470 views)
Tasted by kostaslonis on 1/16/2023: 90+ Wine Club, Chablis blind tasting (Monk restaurant): low intensity, almost numb, smells of nothing at this point, a few weird coffee/nutty notes
palate shows the same profile, med body, high acidity, very angular, unbalanced, underripe green fruit, steely, long finish (537 views)
Tasted by Jeff Boyce on 3/13/2022: Del (1285 views)
Tasted by KVM on 8/8/2021: Lots of fruit in the nose and the rather plush palate. Lacks the required structure, too easy. (1996 views)
Tasted by jbessen on 8/6/2021 & rated 88 points: Mineral. Acid. Pleasing finish. LIght, not too fruity (1591 views)
Tasted by KVM on 6/11/2021: Aggressively decanted to disperse the nose-tickling free sulphur. Fresh white fruit nose. Good concentration and balance..should have paid m ore attention. Well priced. (1858 views)
Tasted by Jona on 5/13/2021 & rated 89 points: Typical. But with quite aggressive acidity. (1743 views)
Tasted by GHRM002 on 3/25/2021 & rated 91 points: Bone dry, minerally, chalky; delicious. Better very cold in my opinion (1183 views)
Tasted by CLE Rocks! on 2/11/2021 & rated 86 points: Beautiful color in the glass, the nose is completely absent on this wine, almost oddly so. The palate is super subtle as well, defined by mineral. It has a creamy approachable texture wanting you to grab for another sip. We sampled it for a potential white tasting. It didn’t make the list. I rarely am without words when sampling a wine, but this Chablis may be the exception. I attempted it again with some food, but alas the experience was like February 2nd. (880 views)
Tasted by Davey in the Navy on 12/19/2020: A deep, seductive, thoughtful Chablis. From one of Defaix’s oldest vineyards from South-facing slopes, these magnificent grapes are partially fermented in oak adding a depth and complexity that is perfect for the Winter season. This is contemplative Chablis. Take your time, think a lot, think of everything you’ve got. (985 views)
Tasted by Nicephoras on 9/24/2020: Out of .375, this has some nice herbal typicity on the nose, but the 2018 fat on the palate. It's not terrible by any means, but it's not what I'm looking for from Chablis. (1094 views)
(867 views)
Tasted by Rick S on 8/12/2020 & rated 92 points: A white wine with body and adult appeal.
Great w/ Pounded Veal / Arugala / Tomato entree! (755 views)

Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet

The 1er Cru Cote de Lechet is home turf for Domaine Bernard Defaix - their winery and cellar is just at the base of vineyard hill in the village of Milly, they are the largest landowners in the cru, and the only certified organic grower there.

The wine itself is racy, yet layered ,with yellow stonefruit flavours bouncing around with crunching citrus and pebbly minerality. There is a small percentage of old oak used but this is a linear, pure style, not a Cote de Beaune wannabe.
Defaix is based in the small village of Milly, on the left bank of the Serein river that divides the Chablis. The Domaine is now run by Didier, son of Bernard, and his wife Helene, and comprises approx 25 hectares across Petit Chablis, Chablis, 1er and Grand Cru sites.

An early convert to organics, the wines are pure, clean but also have weight and texture that is oft lacking in basic Chablis.
We cultivate 8 hectares of this Premier Cru located on the slopes of the village Milly and on the right backs of the river Serein. We are the biggest owners of this cru.

When some of the plots were planted, we found impressive fossils of exogyra virgula that had been perfectly preserved. The remarkable stony and sunny soil is captured in this powerful and complex wine. It flourishes with age and expresses mineral aromas reminiscent of gunflint. The Côte de Lechet is indeed one of the Premiers Crus of the Chablisian vineyard with the most exceptional ageing potential.

Burgundy

Les vins de Bourgogne (Bureau interprofessionnel des vins de Bourgogne) (and in English)

Burgundy - The province of eastern France, famous for its red wines produced from Pinot Noir and its whites produced from Chardonnay. (Small of amounts of Gamay and Aligoté are still grown, although these have to be labeled differently.) The most famous part of the region is known as the Cote d'Or (the Golden Slope). It is divided into the Cote de Beaune, south of the town of Beaune (famous principally for its whites), and the Cote de Nuits, North of Beaune (home of the most famous reds). In addition, the Cote Chalonnaise and the Maconnais are important wine growing regions, although historically a clear level (or more) below the Cote d'Or. Also included by some are the regions of Chablis and Auxerrois, farther north.

# 2013 Vintage Notes:
* "2013 is a vintage that 20 years ago would have been a disaster." - Will Lyons
* "low yields and highly variable reds, much better whites." - Bill Nanson
* "Virtually all wines were chaptalised, with a bit of sugar added before fermentation to increase the final alcohol level." - Jancis Robinson

# 2014 Vintage Notes:
"We have not had such splendid harvest weather for many years. This will ensure high quality (fragrant, classy and succulent are words already being used) across the board, up and down the hierarchy and well as consistently from south to north geographically apart from those vineyards ravaged by the hail at the end of June." - Clive Coates

# 2015 Vintage Notes:
"Low yields and warm weather allowed for ample ripeness, small berries and an early harvest. Quality is looking extremely fine, with some people whispering comparisons with the outstanding 2005 vintage. Acid levels in individual wines may be crucial." - Jancis Robinson

# 2017 Vintage Notes:
"Chablis suffered greatly from frost in 2017, resulting in very reduced volumes. As ever, the irony seems to be that what remains is very good quality, as it is in the Côte d’Or. Cooler nights across the region have resulted in higher-than-usual acidity, with good conditions throughout the harvest season allowing for ripe, healthy fruit." - Jancis Robinson

# 2018 Vintage Notes:
"The most successful region for red Burgundy in 2018 was the Côte de Beaune. The weather was ideal in this area, with just enough sunlight and rain to produce perfectly balanced wines naturally." - Vinfolio

Chablis

Chablis (Fédération de Défense de l'Appellation Chablis) | Chablis (Burgundy Wines)

2014 Vintage Notes:
"... a hybrid of 2004/2007 and 2010. The stone, citrus and limestone amalgam is exactly what we search for in Chablis as the style harkens to a day in the Cote de Beaune proper (1960's - 1980's) when wine was not meant to be consumed the week it was released, battonage was not used by all and new oak was rarely seen ... the texture is natural and 'of the vintage' not 'of the winemaker' .... Like Sancerre or the Loire in general, 2014 in Chablis is one of those rare years with extract and transparency. It appears to be a vintage for the "neoclassic" ages and those of us intent on cellaring the most terroir-driven (but still powerful) examples of vineyard, site-place and varietal will want to invest (heavily) in the magnetic and electric 2014's." - Jon Rimmerman

2018 Vintage Notes:
"There’s not that razor sharp Chablis acidity in 2018,” says Patrick Piuze. “But there is good definition of place. The dry conditions drove vines to drink deeper down in the soil profile."
