Introduction

Hosted by Etienne de Montille, co-manager, Domaine de Montille.

Flight 1 - Amuse-bouche (6 Notes)

A flight of wines produced by the two satellite houses controlled by Domaine de Montille was served on the patio prior to dinner.

Flight 2 - Lobster Bisque with a Lobster Beignet (2 Notes)

Flight 3 - Sautéed Rabbit Roulade with Glazed Baby Carrots and Turnips, Angolotti of Rabbit Rillette (2 Notes)

  • 2008 Domaine de Montille Beaune 1er Cru Les Perrières

France, Burgundy, Côte de Beaune, Beaune 1er Cru

Tasted alongside the 2008 Grèves. By itself, the Grèves is the more impressive wine. The Perrières comes across as too flinty and austere. However, the Perrières was a better pairing with the rabbit. The Perrières has good cherry and strawberry aromas, but is very minerally on the palate. The Grèves lacks the structure the minerality of the Perrières provides.
