Guillaume Bistro, Sydney

Sit down supper with a bunch of Burgundies and food at Guillaume which is close to being my favourite restaurant in Sydney…huzzah!
with tomato and peach gazpacho
pork hock terrine
roasted salmon, courgette, peas, fennel
duck confit, Brussel sprouts, pickled onion and citrus
apple tart and cinnamon ice cream. Note, we had the wine as a blind options game prior to pudding. I called Tasmania and dropped out at that stage.
Great opportunity to try some super Burgundies with some lovely food as well. Pity I'd have to sell my first born to purchase some of these...
NV Domaine Jacques Dury Crémant de Bourgogne Brut
France, Burgundy, Crémant de Bourgogne
Medium minus aromas of a little citrus and brioche. In the mouth there is a little sweetness, soft mousse, simple, medium length <shrugs>
