Introduction

Sit down supper with a bunch of Burgundies and food at Guillaume which is close to being my favourite restaurant in Sydney…huzzah!

Flight 1 - Bracket one - on arrival (1 Note)

with tomato and peach gazpacho

Flight 2 - Bracket two - entrée 1 (2 Notes)

pork hock terrine

Flight 3 - Bracket three - entrée 2 (2 Notes)

roasted salmon, courgette, peas, fennel

  • 2015 Domaine Denis Bachelet Gevrey-Chambertin Vieilles Vignes

    France, Burgundy, Côte de Nuits, Gevrey-Chambertin

    lovely wild, pure, blackberry fruit with some forest fruit supporting. Positively pretty with chalky minerality, cream. Juicy, fleshy fruit, extremely pretty on the palate with a little gentle tannic burr. Long. Rather lovely if not a little simple.

  • 2010 Bernard Dugat-Py Gevrey-Chambertin 1er Cru

    France, Burgundy, Côte de Nuits, Gevrey-Chambertin 1er Cru

    Bretty, spicy, earthy, slight leather, forest floor, a little liquorice an black hued fruit. In the mouth it's tightly tannic, chewy in fact, quite drying, liquorice and black fruit, leather and earthy. Still needs time. In fact with time in the glass this opens to show some pretty ripe black fruit on the palate. Very nice.

duck confit, Brussel sprouts, pickled onion and citrus

Flight 5 - Bracket five - pudding (1 Note)

apple tart and cinnamon ice cream. Note, we had the wine as a blind options game prior to pudding. I called Tasmania and dropped out at that stage.

Closing

Great opportunity to try some super Burgundies with some lovely food as well. Pity I'd have to sell my first born to purchase some of these...
