Blind tasting with the traditional Lutefisk (stockfish of cod soaked in lye, and then baked)
Blind. Some gunpowder/sulphur, citrus, melon; very smooth mouth feel, lowish acid, quite long, big bodied, not much of a finish to speak of.

Blind. Hint of nuts, butter, some aniseed; a bit flat fruit, some bitterness in the finish, smooth.

Blind. Muted at first. Some oak, smooth, high acid, long and intense. After a while a very fine finish emerges.

Dark, some brown in the brim; slightly bretty, smoke, dark fruit; intense and dark-fruited, long, full bodied, very structured, tannins still present. Although angular still, it gives much pleasure with food now.

Blind. Transparent red with some browning; muted, some dirt, a hint of PN, smoke; high acid, slim, dark fruit, kind of stylish, red and dark berries.

Blind. Transparent with lang browning brim; fine depth to it, almost layered, meaty, smoke; a bit drying finish, most intense, moderate body, complex finish.

Blind. dark, almost opaque, no noticeable brown; smoke, not much wood, but heaps of dark berries; tight, moderate length, most concentrated. I never believed that 02 could be like this.

Blind. dark berries, a hint of smoke, minerals, meaty; abundant tannin, high maturity to the fruit, violent structure, lots of stuffing, dark berries. Utterly promising. Guessed left bank.

Bark with some browning; A hint of smoke, dark berries, emerging complexity in the glass; Mature and sweet fruit, fine structure, complex finish, fresh, lingering. In the beginning of its drinking window.

Brilliant amber; Exotic spices, fine depth to the nose; The mouth does not really follow through, long and smooth, very likable, good concentration.

Very dark, and little brown; lots of berries, minerals and smoke, raisins, fine depth; Very structured, tannins still present, long and intense, on the lower side of sweetness for a VP. Would give it 10 more years.

NV Ulysse Collin Champagne Blanc de Blancs Extra Brut (2013) Les Enfers 92 Points

Some definite yellow to it, a lot of initial mousse; relatively muted nose, some mature yellow apples; high acid, long, some complexity to the finish, big moutfeel. Hesitant as to how robust this wine will over the next decade. Two bottles have shown this rather advanced stage.

Blind. Green and yellow apples, some grapefruit; very good grip, fairly low dosage (?), long, structured and promising, still some complexity emerging in the finish.
