Introduction

Paul Einbund put together an unforgettable meal, series of wine pairings, and all-around experience with Rajat Parr and Jordan Mackay in honor of their new book "The Sommelier's Atlas of Taste."

So fun to hear them and the other somms blind taste through several glasses, revealing their processes, their stunning level of skill and knowledge, and also how in blind tastings even they can get it wrong.
Rajat Parr bind tasted and called an exact wine: producer, specific bottling, and age range. I've heard it happens but to have him walk us through it live--and then get it right!--was just nuts. Paul's #2 in the wine program (with a fraction of the experience of Parr) also came close and it was just as fascinating to walk through her thought process, in both cases while we tasted the same wine.

Flight 1 - various fish and seafood nibbles; then geoduck clam with grapefruit and pequin (2 Notes)

Flight 2 - radish and pear with chili vinaigrette (3 Notes)

Flight 3 - sea scallops with uni bernaise and delicata squash (3 Notes)

Flight 4 - quail, mushroom, nettle (3 Notes)

Flight 5 - smoked short rib, carrot, cocoa (2 Notes)

    So meaty and seductive. Honest and transparent. Sweetens on the tail and even more so with air. Pretty clear why this is known as such a special wine. Provocative. I'd like to try the 2010 or some other vintages. Ready to drink.

    Dense and deep but agile with red, black, and blue fruit, charcoal, corn, and cactus flower; sophisticated, classy, and food-friendly. Fantastic and ready to drink now, with plenty of life ahead.

Flight 6 - cheese:: comte, etude, cavatina (2 Notes)

  • 2010 Azienda Agricola San Giuseppe Brunello di Montalcino Stella di Campalto Riserva 95 Points

    Italy, Tuscany, Montalcino, Brunello di Montalcino

    Bright cherry and spicy florals frame a spacious but intense, dense, rich, and savory Brunello that is super approachable despite its youth. This is poignant, even a tad sharp at first but whatever aggressiveness is there is washed by waves of deep, plush, smokey inner sweetness. The finish is a movie reel of class. An exquisite way to to finish a thrilling wine-oriented dinner when paired the cheese course, which helped this young wine expand, burst open, and flow. My WotN. Entering drinking window but seriously why wait. Now-2028.

    Surprisingly fresh; gentle, long and loving. So well-balanced and supple for its age. Despite having mostly faded, this has not veered off course. What a treat.
