Another Birthday Dinner for Angela (Our House, Hong Kong): Decanted for 5 hours (which I'd suggest as the absolute minimum if you want to try a bottle now). Deep, totally opaque red-black colour with the merest lightening to a still opaque red at the meniscus. Nose is OMG....a big 'hit' of linear and very primal but warm and welcoming fruit with tannins that have softened slightly beyond the inky stage, lots of graphite and hints of damp forest loam. The palate is similar - very firm and somewhat austere but with sufficiently softening tannins to be just about approachable yet remaining very stern; great structure, deep but bitter cherry fruit combined with green Chinese Bitter Melon on the back palate which was too predominant to ignore. But....this has a beautiful cathedral-like resonance inside the head on the finish that will only grow more with a slow march towards maturity. We drank this alongside a 2001 Cos D'Estournel, which was half-open...but this wine will need much longer than 4 more years to even reach that stage. Not even strong French cheeses could open it up. 93 easy for now...but I would hide it away for another 7-10 years.

Drank with family over 2 dozen oysters at Raw Bar 8 in Sheung Wan. My first of 18 bottles bought on release and it was a nice occasion to try one even though realising it might be infanticide...it wasn't quite!

Served in medium-sized white wine glasses. Very light silver gold colour. Moderate mousse but millions of the tiniest ever bubbles in endless streams. Nose is beautifully tensioned ozone, grated lemon rind, grated lemon grass and that sensation of static electricity in the air on a summer thunderstorm night. Palate is gorgeously alive and a super mouthfeel that is bursting with 'frizzante', chalky and very elegant and understated. Wow…. this just explodes inside the head! Absolutely stunning. An easy 96 but can only improve with a lot more age....I will try to limit myself to one bottle a year to chart its progress and to maximise the anticipation. Truly memorable.

Nose is perfect graphite purity. Black fruit taken to a modern art painting level...impossible to put into words. Palate is oh wow.... purity and linear attack of ‘black slab’ fruit and stern but somehow tactile tannin. The resonance and reverberance is a deep, low toned hum that is almost ‘ohm’. Wow, this is so young but so beautiful. The purity of the fruit and its slightly confit aspect is stunning. Silence creating....which is my greatest compliment of a wine. Can only improve with age. My first of a case and I think I have timed this right. Almost everyone's WOTN against some similar drop-dead competition that I scored almost as highly. 96+

La Nuit des Garcons (Grill Restaurant, Hong Kong Country Club, Hong Kong): A fabulous rich and open, opulent Champagne to kick off our long-planned Monday Boys' Dinner. A fairly dense texture and has put on some weight in the past year or two....suggestive of early maturing rather than a vintage for cellaring...but it has an alluring balance of freshness and power at this stage of its (rapid?) evolution. Great stuff!

Decanted for 4 hours before service, which was about right but could have been longer. Perfect cork. Transparent cherry red and very strong lifted notes of oiled pews in a cathedral. Now is semi-transparent. Nose is earthy, deep dark spices like star anise, liquorice stick, white pepper, lots of other black spices. Quite linear by Musar standards....quite intriguing in a Priorat manner. Palate is immediately gorgeous.... really silkily textured deep rich textured dark red cherry, classic Asian spice market, rich and unctuous like a great Rhône wine.... belly-filling. Super deep and long finish with impressive length and reverberance. Head-filling. Has opened up massively since I first drank it 3 years ago. Ready now but has a decade or two of further development ahead of it. Gorgeous. 92+

Friday Dinner at Home with Friends (Our House, Hong Kong): Decanted 3 hours before serving (which seemed to turn out about right but my previous bottles opened in March 2016 were decanted to 4 hours and showed a more fully-open side of the wine). Totally pristine cork with less than 5mm of staining. Totally opaque black-red in apprarance with just the merest beginnings of translucence at the edge of the glass. On decanting, the nose is an immediate and massive blast of milk chocolate and biscuit (KitKat!). On serving 3 hours later our guest's first words were "big chocolate!". There is some deep bramble fruit lurking behind the chocolate sweetness but not yet ready to come out and play. Palate is truly wonderfully oak-driven (not normally a combination of words I'd use) but very integrated with a full-thrust power that melts effortlessly into a huge powerful, resonant, reverberant finish with really long reverberence and resonance.....like an audience that keeps clapping long after the final orchestra note has faded. Totally super...and some really full fruit emerged with more time in the glass. I think that this can unfold impressively from now. 94+ and might get better over the next 5 years.

Steak Dinner (BeefBar, Duddell St., Hong Kong): Decanted half the bottle for 30 minutes before serving with insanely good rare steaks. Deep opaque purple-blood colour. Nose is immediately gorgeous vanilla-infused fresh sawn plank wood, a creamy element infused with blueberries and some signature Geyserville black briarberry tart structured fruit in the background. Palate is lovely fresh zingy taut briarberry fruit framed by blackberry seed tannins and rounded warm oak. Surprisingly little length but lots of Paul Draper class evident here and a perfect reasonably-priced restaurant list wine to compliment a Michelin 1-star steak restaurant with my teenage son on a boys night together. All that said, I would hold off for 3 years if I had it in my cellar. 88+

Totally saturated cork under wax cap but perfectly intact and easily extracted. Totally transparent and almost watery faded damask colour… looks much older than a 1994. Nose is immediately high lifted piano notes of bitter orange marmalade but mellows within 2 hours in the glass into soft, perfumed musk, dried spices and rich dried red plums fruit. Palate is sharp, tart bitter orange marmalade with high acidity and light but very dry tannins but which segue into a cranberry sharpness but with a counterpoint of rounded confit plum and less dry than earlier. Really multi-dimensional and contemplative on the long, resonant finale. Gorgeous. No rush if you have this in your cellar but is fully open for business.93+

'Welcome back Neal' Dinner (Giando, 5 Star Street, Wan Chai, Hong Kong): I bought two cases of this wine en-primeur, which I am one-third of the way through....but this one was brought by Neal. Decanted for 2 hours before serving ( I would recommend a lot longer but circumstances don't always permit).Totally opaque deep red colour. Nose is quite immediately perfumed, loads of cedar and deep almost-pastilled blackberry. Palate is really young, heavily tannic. Gorgeous depth and precision of fruit with a good rounded surround of oak. Massive resonance and reverberance inside the head on the finish. Gosh, what a finish despite a somewhat un-matured middle. I always love this.

Sunday Lunch - Greg & Sayo with friends (The Conservatory, Crown Wine Cellars, 18 Deep Water Bay Drive, Shouson Hill, Hong Kong): From 375ml. Served with lightly pan-fried foie gras. Very deep but bright-sparlkling and fresh honey yellow gold colour. WOW!....nose is immediately an Andy Warhol painting BLAM! Sensations of the purest honey poured into a tin of Dulux white emulsion paint. There are 10 planes of honey here....like a modernist painting. Palate is pure liquid gold...and immediately sends you plunging down Alice's rabbit hole into deep reveries. So many dimensions of dry and sllightly burnt honey and blow-torched apricots. Amazing length. 97 easy....which is an extremely high score for me and I think I was keeping my scores down today.

1989 Bordeaux Dinner (Joseph's Place, Wong Chung Hang, Hong Kong): Deeper and more brooding colour than the 1990. Translucent at the edges. Nose is more strongly cedar and tobacco than 1990. Palate is beautifully silky and seductive... heady and reverberant even in the mouth before you swallow. Wonderful expression of cassis. This is drinking at its apogee but has 10 more years at this level. Much improved from when I last drank it 6 years ago. 94 tonight.

My Birthday Dinner (Seasons By Olivier E., 3/F, Two Lee Gardens, Causeway Bay, Hong Kong): Decanted for several hours then drank over conversation and an elegant chocolate desert. Light straw gold colour. Nose is smoke and dried mandarin orange peel (very Chinese). Palate is thrillingly bitter Seville Orange marmalade but medium weight. Smoky finish. Very heady and resonant. Light and really complete....bitter orange is the abiding element but without much sugar. Fantastic...and could be a perfect Sauternes unless you have been lucky enough to drink the D'Yquem of the same or similar-level vintages.

My Birthday Dinner (Seasons By Olivier E., 3/F, Two Lee Gardens, Causeway Bay, Hong Kong): Golden and rich in colour. Vigorous and persistent bead. Lovely bready, toasted, more-ish, sniffable nose. The palate is deeper and similarly more toasted than in the past with an extremely lemony - especially fresh lemon juice - mid-palate and a Pomelo rind dry finish. Quite heady and resonant. Super. This vintage is still young but is really starting to come into its stride and DP is one of my favourites within the vintage. This had the weight to take a Comte-based amuse bouche and another of roast suckling pig in its stride as well a the Sea-Urchin starter for those with some left in their glass.

1939 Cheval Blanc Dinner....despite a typhoon. (L'Envol Restaurant, St. Regis Hotel, Wan Chai, Hong Kong): First-time recent release from the negociant who has held the total release since 1939-41. According to Pierre-Olivier Clouet, Cheval Blanc’s technical director, the challenging 1939 growing season provided only a minute yield, and since there was little market for fine wine, not to mention an immediate shortage of glass to produce bottles, the société civile that owned the estate decided to sell 14 barrels to Mähler-Besse. The Bordeaux négociant found a client in New York and duly sold 90% of their stock across the Atlantic. However, when it came to shipping the wines in 1941, the vessel was forced to return to France due to the threat of German U-boats. Consequently, the bottles languished at Mähler-Besse until recently, when one of the team notified Pierre Lurton and brought a bottle to Cheval Blanc for their inspection. The château does not own a single bottle of 1939, so Mähler-Besse’s stock represents all that exists. Bottles varied in ullage, and they decided to re-cork the best, electing to do so at the négociant rather than the château so there can be no claim that this is ex-château stock. A few of these re-corked bottles have been released onto the market.

Ridiculously fresh-looking: transparent, brightly jeweled ruby. Nose is high-toned: very precise, perfumed red strawberry and similar fruits but with delicate bell pepper structure surrounding it. Palate is tart, alive, light, floral and incredibly fresh red fruits.....cranberries. Dilute but pure and feminine and really elegant. Moderate length and reverberance but deeper if you think of it in a feminine perspective. No particulates.....seems recently filtered? Feels like a totally modernised reconditioned classic car, like what Singer does with 1960s Porsches, whereas the 1953 Leoville Las Cases drank alongside it had the greater authenticity of an unconditioned classic. Wow....I have scored this for total experience. Thank you, Watson's Wines! 95+

Lamma Island - Boat Trip and Long Saturday Lunch (Rainbow Restaurant, Sok Kwu Wan, First St,, Lamma Island, Hong Kong): Two magnums popped and poured into small glasses in a hot outdoor Cantonese seafood restaurant. I only had half a glass because I really like this wine in the right setting but even a 75cl bottle needs a 4hr decant to my taste. Some sense that this may have gone into a more closed stage of its evolution but that may just have been the format and the circumstances. Not fair to score it.

Christmas Day Family Lunch at Home (Our House, Hong Kong): On opening - Really impressively high quality cork, untouched by the wine except for the underside. Reddish-purple colour. Translucent. Slight sediment. Immediate nose of blueberries and tomato vine, anthracite, cold bitchumen and green peppercorn. Palate is very bitter 95% cocoa black chocolate, cold black tea, very bitter dried black Chinese medicine ingredients, gall bladder.

Xmas lunch - After overnight double decant....jeez, this is a stunner… stops you in your tracks. Tons of mellow fruit and a lot of complexity. Everyone loved this. 95

It remains in Runny's and my top place from some 20 wines we investigated as contenders for "The Next Grange?" 13-14 years ago. Hold.

Magnums Dinner (Friend's Place, Wong Chuk Hang, Hong Kong): Impeccable boxed magnum from the winery. Perfect cork but interestingly it had been inserted upside down!

Initial notes on opening: Fully transparent cherry red colour on opening. Initial nose of new wellington boots and high- toned kirsch. Initial palate is tart and tannic red cherries and fresh cranberries. Quite a volatile eau de vie immediate resonance and reverberance inside the head in the mouth and on the swallow... very long indeed.

Decanted for 7 hours and then served blind but knowing it was my wine. Almost transparent except for the core. Has retained its cherry red colour. Nose is very well behaved and clean and reticent, almost disappointingly so...loganberry in the background. Palate has really benefited from the long decant - it is a BAM! of classic Musar Eastern spice market, black tapenade, deep red spiced Turkish delight, good medium acidic freshness. Then it suddenly grabs you by the back of the skull on the back palate and takes you down Alice's rabbit hole. Intellectual but also hedonistic. The power is phenomenal and very long indeed. Close to silence creating but too reticent on the nose to score accordingly higher. This is my favourite vintage of younger Ch. Musar and the first time I have opened a magnum. In most people's top two wines tonight. 93-94.

White House Dinner (Pok Fu Lam, Hong Kong): Burnished deep copper-gold colour. Nose of nougat, almonds and burnt almonds. Palate is rich, unctuous, burnt peach fruit, over-ripe bananas, over-ripe pears. Very rich and highly resonant and reverberant inside the head on the finish. Excellent.

Ch. Musar Dinner with Marc Hochar (Crown Wine Cellars, 18 Deep Water Bay Drive, Shouson Hill, Hong Kong): Perfectly transparent jeweled ruby in colour. Nose is nail varnish remover and lots of pleasant VA, quite penetrating and hiding a lot of complexity in the background. Palate is sweet, dry, still surprisingly tannic, sophisticated but not yet even half-unfurled. Great......and lots of upside potential over the next 10 years.

Sunday Lunch at Friends (Their House, Pok Fu Lam, Hong Kong): Opened but not decanted (which was a mistake) for several hours before serving. Semi-opaque dusky ruby jewel colour moving to transparent at the edge of the glass. Nose is very pronounced graphite with some fresh liquorice root, dried star anise fom Biriyani rice, a slight whiff of 'car drifting" tyres and deep blackcurrant. Palate is very complete and quite rounded on immediate entry but quickly hits a more austere, less integrated mid-palate. The end-palate has a lot of dry but fine tannins on the finish. Mellow resonance and reverberance on the finish and very fruit-full in the belly. Needs more time for this to unfurl - either a 6+ hour decant or (better) 3-5 more years in the bottle. This makes me think of what Leoville Poyferre 1990 might have tasted like 10 years ago. 91 for now (too rich for me).

Decanted for 4 hours before serving. Glorious ruby deep rich jewel brightness semi- transparent. Nose is glorious damp earth, cedar, damp autumnal bracken. Fully open and singing. Palate is succulent semi-confit blackberry and black currant, lots of cassis, opulent, hedonistic, multi-layered, almost a meaty gravy element to it. Totally open but years ahead of it. Heady, rich, reverberant, great length. A slightly astringent element of black tar right on the finale shows it has the tannic backbone to go for a long long time. Fantastic but just not quite top league (yet) but could get there.

From a 750cl bottle of the 161eme, which is a 2012 disgorgement with a 2005 base. No detailed notes but I enjoyed this more as an aperitif than my normal comment that I only 'get' this wine when accompanied with food.....that said, the second glass - served with a very mild Thai green mango sweet salad - was better.

1989 Bordeaux Dinner (Joseph's Place, Wong Chung Hang, Hong Kong): My contribution...a magnum double decanted for 8 hours. Very bright, jewelled ruby gemstone near-transparent in colour. Nose is BLAM!.. so clean, fresh and definitive Pauillac... but the freshness is the standout element...cedar but little tertiary. Palate is wow... deep but powdered red and black small berry fruit, almost confit, hints of tobacco leaf, cedar shingles, still so fresh and lifted. Slowly mounting resonancece and reverberance from deep in the bottom of the cortex. Stupendous but just short of silence-creating. Lots of people's WOTN. 94+

Chú Xī (除夕) Dinner for Chinese New Year (Greg & Sayo's House, Hong Kong): Decanted for 3 hours then re-bottled for 3 hours then drank over the next 2 hours. Apart from some intense crystallisation on the foot of the cork it looked like it had been bottled yesterday. Colour is an almost totally opaque red-purple-black colour with the slightest lightening at the edges. Nose is precision-ground graphite, red briar fruit, star anise, black liquorice stick, blackberry fruit....really complex, mesmerising and super precision. Fantastic. Palate is super-fresh acidic attack with very pure and precise blackcurrant and blackberry fruit. Super semi-firm tannic structure and delineation, very fresh and lifted.....thunderous resonance and reverberance.....thunderstorms....really refined. This hangs inside your skull and hovers with its reverberance and its unwillingness to let you go. Gosh!
