This was my second try at this bottle and I still found myself disappointed. Although the wine appeared to be fine in colour and appearance, it was quite sour on the palette with no real strong points in flavours. I'm quite confused by this based on other's tasting notes. Perhaps I just ran into a few bad bottles.

Wow, this was great. Perfect fill and cork. Leather and spice and all things nice. Still fresh, exquisite balance, ample length. So alive for such an old wine, a sign of a great vintage. This bottle would have lasted many more years, but wouldn't have improved (95 Superb wine)

Power, concentration, intensity, ripe fruits and rocks make up the true blend for this wine. The wine is rich, dense and has a long life to look forward to. I know some people do not like the wine, but I love it! It's definitely better with an hour or two of air.

not improving with age. It's hard for me to see this going anywhere. They 'pushed' this wine in a crappy vintage to make it into something, and turned it into a Stepford Wife. Price is way out of whack with value ... an obvious problem for most of Bordeaux anyway. Just really hard to buy Bordeaux these days unless you either have unlimited funds or just stubborn.

Plums, raspberry, cigar box nose. Still very young and the fruit is fresh. Good acidity, red fruits on the palate, high tannin. This will go for ages.

With that said, the wine changed quite a bit over the three hours it was consumed (double decanted 7 hours prior to the tasting) and these are my impressions:

First small pour had a nose of ripe red fruit. On the palate, acid is overwhelming and the fruit shows a mix of red and dark fruit. Not very enjoyable on its own - better with cheese and charcuterie.

3 hrs later: Acid is out of whack with the fruit and the tannin. Overall the structural elements are there but it's currently lacking in balance. The fruit itself is not very enjoyable either - it is sour and disjointed. There does seem to be some concentration and deeper layers but they're not showing clearly and seemed to tighten up over the course of the evening. There's a lingering finish but it's not very pleasant. Likely needs more time before being enjoyable.

Excellent! Deep garnet with brick coloured rim. Complex and intense nose, great on the palate, medium body, very well balanced. The finish is just awesome, very long. It really doesn't appear to be that old. This is mature and ready to drink now, but there is no hurry here.

All around lovely wine. From cellar where wine rested since purchase. Bottle in great shape with very little ullage. Most of the sediment clung to the inside of the bottle and made the process of decanting very easy. Excellent, dark color; very youthful looking. No sign of fatigue; quite the contrary, as it appears really young for a 2004. Amazing rich, cherry, vanilla nose and on the palate fine tannins surround the perfume, dark cherry and strawberry flavors. A bit fleshy, but I think the Cabernet Franc shows though in this wine. Excellent balance. Tannins are medium in assiduousness and subside after about one hour of air time. Good tight, mouth watering finish. Enjoy this for a number of years.

(Served with a bacon wrapped filet with a green peppercorn sauce and farro pilaf with cherries in a balsamic reduction sauce. Splendid combo!)

Classic Bordeaux. Double decanted before traveling to Blue Duck, D.C. Decanted there for almost an hour before serving. Minimal fine sediment. Garnet, black raspberry, cassis, and lead pencil. Mild tannins, with suave mouthfeel, and extended finish.

Decanted for 6+ hours. Gorgeous wine. Still young but has moved into a long wonderful drinking window. Shows no sign of age, has a bright ruby color and no cellar age tastes on the palate. This wine has it all, beautiful nose, power, finesse, balance flavors, smooth and a long delightful finish. Tannins are everso present, but well into their journey. First bottle from our case, likely drink one a year from this point.

This is the 3rd occasion I've been able to try Pavie and it's always a treat. It was a bit of a mind bender because it was served to us single blind as a gigondas. As you would expect I was confused by the oak treatment, massive tannins and couldn't find the Grenache varietal characteristics. But after the mistake was revealed it made much more sense and we all had a good laugh.

On the nose this was so reduced and almost port-like with layers of concentration and beautiful seasoned oak notes with a WALL of tannins. I luckily held on to my glass of it over 2-3hrs and was able to watch it evolved. Showing more graphite, cherries, dust and leather with time. It took quite some time for the secondary and varietal notes to pop but when they did there was a mineral framework and a mélange of fruits but at this stage it's still very modern in style but ultra complex and a wine of true quality and one that I think will improve with age once the secondary notes come to the forefront. Thank you so much for sharing Motz, it was truly appreciated.

Enjoyed with good friends over dinner. The wine has changed since my last tasting (note of 1/1/13), when it sported a Cabernet Sauvignon complex. The 'raw power' has faded and the wine is noticeably more subdued. (Dare I say it showed more depth and promise two and a half years ago?) My friends rightly noted that it has only begun to reveal secondary elements, and tertiary notes are all but absent, which suggests the wine may be in a dumb phase. However, it is not locked down or tight, presenting something of a conundrum. Either the wine will remerge a powerhouse from its present mellow, approachable, oaky phase and further develop, or it will not be as long-lived as some have suggested.

For clarity, this is a beautiful wine, but it is not currently a blockbuster and it shows remarkably well right now, even with the prominent oak. This brings into question whether it is a 30+ year wine. This bottle at least suggested it may be more of a 20 to 30 year wine as it did not show they way one might expect a 30+ year wine to show at this stage of its development. Time will tell, and it is worth tasting now to get a benchmark. While (somewhat biting) oak tannin is prominent, the wine is surprisingly drinkable, not to mention delicious. 94-96.

This is very modern in style for a Bordeaux. Breathed it in the bottle for 30 mins and poured afterwards. The nose had caramel, mocha, red fruits and dark fruits. The palate was very silky. Although this is a bit modern, it is so ready to drink. Great effort!

This is drinking very well - integrated and full bodied. Still has youthfulness and strength in the finish (a little heat still there) - decanted for an hour. Tannins 7/10 - but not overpowering at all - classic french with a touch of fruitiness in the front end palate.

Looking back on my last tasting note - I assume this must have softened over the past 2 years or maybe the decanting and this bottle was just a little softer and aged.

a glass over lunch, decanted the evening before, and tasting even better because you know it is not one of your precious bottles. Fortunately for me,my joy at seeing what I was about to drink far over-shadowed my embarrassment by bringing such a minor offering (2002 Noon's Shiraz) to what I thought was going to be a casual meal amongst the five of us.
in my opinion, it is no longer appropriate for a wine lover to admonish those brave/fool-hardy souls who choose to vinify their liquid gold in a style many perceive as being "modern" or "new world".
I prefer to accept that red Bordeaux now encompasses a broad and vast spectrum of superb wines that extend from the tight, pure, laser-focussed, and mineral offerings to the opulent, rich, fat and hedonistic wines that are an increasing part of the Bordeaux landscape. Both extremes, and everything in between, can vary from the extremely ordinary to the extremely wonderful, and that is the beauty of the World's most famous wine region.
There can be no doubt, Pavie sits on the far right of the curve, perhaps at the three standard deviation mark to appease you statisticians out there, but for me, it still screams Bordeaux, and it still screams greatness.
Massively concentrated, hedonistic, plush, fat, and ,decadent it is, but there is a mineral and tannic core that keeps everything in check, and serves to remind the drinker that this wine requires a further decade or two to unleash it's full glory.
At the end of the day, nothing has changed since I last visited this wine, and it remains utterly perfect.

Tasted at the Chateau. It is still too young right now, but has all the elements to become an outstanding wine with further ageing. Very well integrated and complex.

70s French Wines (Jade Palace Seafood Restaurant, Forum): Tasted blind. Dark ruby and vibrant hues.
Fresh and vibrant, lifted bouquet of floral, blackcurrant, dark cherry, sweet spice & licorice. Elegant and showing nice fruits, amazingly holding so well so fresh.
Nice entry, still robust, young with loads of fruits. Blackcurrant, dark cherry, spice and earthy undertones. Vibrant acidity lead to a long persistent finish. Seamless and harmonious.
What a sensational effort as it tastes like a good 80s or even 90s. Judging that Château Pavie has not made its name in those days.
This is so impressive and voted as WOTN unanimously by the group.

Disappointing. 30-45 min double decant was good, with wine opening in the glass. Very mineral nose and rich mouthfeel, with particuarly broad mid-palate. The smokey notes I love from Pavie took a while to emerge. Not as thick as expected. The wine evolved in the glass - at one point was v hedonistic, then became flat with some heat on the finish. Not sure where this is heading, will drink my case soon and with food. I much preferred the 2001 Pavie a few years ago.

Big, bold and strong wine still showing great structure and smooth tannins. We breathed for 6 hours in the bottle before sipping. Crazy long and elegant finish.

Mike Grammer comes to town (Galletto Ristorante, Modesto Ca.): WAY better than the 00 we had a month or so ago….not sugarfied…..tastes of Bordeaux! Wonderful dusty graphite dryness, silky smooth dark berry fruit, currants, old leather, menthol, cigar box, cold smoked oak, licorice….nice firmness with minerality…really super wine to sip on!
