The tasting begins to get complicated by the alcohol accumulated in blood and the fatigue of the palate. Nobody here spits and we don’t understand at this point why we have left the best for last. Aged 22 years between American oak and old casks of sherry. The presence of turb has practically disappeared and the notes of raisins and dates prevail, very much in the style of the Pedro Ximénez grapes. First of all, a delicious curiosity. Bottle recently opened and brought by Borja. |

A little meaty, spicy, apple and lemon very far in the background. The palate is far more enjoyable than the nose; the peaty smoke is sweeter and lends more complexity and generosity. Still far too big for the fruit but this is smoothly textured and perfectly pleasant whilst carrying considerably long on the palate. |

Equally beautiful palate that fits the nose exactly ! Noble sweetness of moscovado sugar, dry in the length. My rating here is trying to be "objective", a subjective rating would be one or two notches less. Despite the undoubted quality, it seems I am getting tired of this style. |
