I was enjoying this before the food came, but it was even more satisfying as an accompaniment to the amuse-bouches, especially a tiny tart with trout roe -- a perfect, uplifting harmony of wine and food. The wine has moderate acidity, very fine bubbles, and is at the dry end of brut, with a hint of red-fruit flavor. |
