Wednesday, December 28, 2022 - Notes from a bottle opened the day before and kept in the fridge over night. Golden straw color, still with green streaks. Fine notes of apples, lime, a whiff of licorice, and that dusty/crushed stone element. Medium to full bodied attack. Very fine fruit up front, dominated by citrus and green apples. The wine expands on the palate including again those tones of licorice. Very fine balance where acidity and fruit are in perfect harmony. The finish is a bit tart, and the aftertaste is extremely mineral and salty. Salt tones lingers for almost a minute, only complemented by dry citrus tones. A very fine and classic Chablis, perhaps lacking some fruit for extensive cellaring. Will keep for a long time, but I guess that the acidity will win over the fruit.
