Still amazingly young in color, almost water clear with an intense green glimmer. Tight and young at the nose, giving little more than some lime and green apples, and those typical tones of sea salt and chalk. Medium bodied attack on the palate, lots of citrus and green apples on the mid palate, high acidity and an slightly bitter tone like grapefruit. The aftertaste is high in acidity, but also with a strong note of salt and chalk. The finish is lemon and salt. This wine has just started it's aging process (I wonder when this will start, if ever?). With food - we had grilled scallops - the wine expands to include some more fruity tones. This bodes well for the future. This bottle was much younger and immature than the last. There must be some serious bottle variation here.
