Tuesday, December 13, 2011 - This wine continues to puzzle me. I've had exclusively the 375s, one remarkably fresh, the others showing much older than their age. This one falls into the latter category. Initially, almost undrinkable with an overt oxidized character. However, with 10 minutes in the glass, enough of that blows off, and enough fruit and acidity come forward to turn this into a quite pleasant if not typical Chablis. The fact that it blows off makes me think that maybe it's not premox, because usually for me the more time in the glass the worse a premox'd wine gets. The raw materials (acidity, marine salinity, fresh fruit) are there, but somewhat masked by a nuttiness that while faded, still makes its presence known.
