Dim Sum Club at Yan (Yan, National Gallery, Singapore): Pleasant, but rather too young. The nose had a nice shade of apple, honey pears and a twist of kumquat, along with a touch of earthy development. The palate was really youthful though, with bright zippy acidity and fine, fizzy mousse racing through rather rich, ripe flavours of red apples and sweet orange pears, this leading into a slightly spiced finish. The 10 grams of dosage really showed in the richness on the palate. Still young, with plenty of puppy fat - the wine needs time yet, but was fairly pleasant even now. Good with food too.

Så psss bra att jag tvungen att beställa fler på en gång... nu fanns det 2012:or i lager så det blev sånna plus H. Bolliots 2 prestige cuveer... både Cuvee Julie & Cuvee Laetitia! Ska bli intressant att testa fler flaskor av denna producent!

We were enjoying a Les Freres Marchand 20 Cheese Dinner at home with friends when we sipped this wine. We poured in proper, big bowl, Burgundy glasses. Tiny, barely noticeable bubbles. Aromas of apples and toast pleasant. Powerful, yet silky palate, relatively dry, nice equally strong finish. Our first time sipping this wine...definitely will not be our last!

Champagnes of Montagne de Reims (Hi-Time Wine Cellars - Costa Mesa, CA): Pear, red apple, crushed minerals, and brioche on the nose. Intense and concentrated, this is a big, powerful wine. Yet as big and burly as it is, it has great energy and does not overwhelm the palate. In fact, I couldn't stop drinking it. Great wine, and probably my WOTN (although the more refined Clouet was a close second). 91-92 points.
Old vines, this has great depth and wonderful meaty orchard flavors burt with great cut, shimmering minerality, bright tropical notes, rich but light on its feet. Brilliant champagne.

The 2007 H. Billiot Fils Champagne Grand Cru Brut Millésimé is medium (-) gold in colour with a nose of beansprouts, fresh mango salad, beancurd with an overlay of dried apricots, fresh cream and pine nuts.
An entry on the palate of fresh cream, ripe mangoes, ripe apricots followed by some pine nuts and woodiness. There's a back end rising spice. Brilliant elegant structure. Calm but very broad yet focused. Grower champagne in style for sure.
The 2007 H. Billiot Fils Champagne Grand Cru Brut Millésimé is made with 75% Pinot Noir and 25% Chardonnay - has some years ahead.
