Cassis and black fruit, with a hint of cedar, pencil lead, and soft, tobacco tannins. Gorgeous, gamey nose that blew off with the decant. Not overly ripe, a huge plus, with good mid-palette structure often missing in Paso Robles’ Cabernet Sauvignon. Still quite primary, it transformed admirably with 6 hours of air, suggesting its best years — and a few points — lay ahead. Soft, young, precise Bordeaux blend, made with estate fruit and sustainable methods.

Creme de cassis, sweet tobacco, cedar, menthol. Elegant, complex and silky (it has been open for 9h). Ripe dark berry flavors with hints of oak and pepper lead to a long dry finish.

Kind of blind, saw the label but never heard of the designation. Big Bordeaux blend? Sort of with malbec. It's youthful and intense. Strong cassis and unsweetened dried cocoa.Tannins are very angular with a green streak at the finish. An overnight decant is warranted at this age. This should be a very nice wine with another 5 years and plenty ahead of it.

Paultacular Champagne Tasting (At Paul's Place): Some cedar, fragrant oak and Cab-like aromatic. The palate shows chocolate, iron, cedar, roasted cherry and an exotic quality that reminds me of maple syrup. The finish gives off a nice tobacco leaf quality, along with some grip. This kind of walks the line for me but I take the side of liking it. Give it plenty of air and then enjoy if you open now.

Retail $60. 70% Cabernet Sauvignon, 19% Petit Verdot, 11% Malbec. I was on my mission: clearing through my forgotten samples, and this was the next (more ore less) one up. An SIP (Sustainability in Practice) wine from Paso Robles, and a winery that I do not know at all, but might need to change that. This is the flagship wine from Halter Ranch and it has all the stuffing: great fruit, decent acidity, plenty of fun. This is a stellar wine (my wife loved it), but intended for consumption in the short-term. This is a New World wine, through and through. thedrunkencyclist.com

Deep ruby, savory aromas, bell pepper, black fruit. Dry, medium(-) acidity, medium(+) tannin, medium(+) alcohol and medium(+) body. On the palate black fruit, leather. Good length with refreshing fine tannin. Will improve with further maturation. Should not be released before 2020. Not rated: too young to drink.
