We have had this wine a few times now over the last year and always delivers and albeit we do not fee this is for prolonged ageing ( We always doubt the ageing capacity of Bollinger) this is just on the money now. Champions league it is. Quite fresh for this rather hot year, with slightly more Chardonnay in the blend than usual. Bouquet of lemon, Yuzu, slight brioche and a little herbaceous, with time stone fruit comes through. Will positively develop for decades to come.

20 July 2020 disgorgement after 12years under cork. Always a joyful wine and these 2 re part of the same pack we had 5-6 months ago ( Papies 95) . We question longevity of Bollinger and give how pretty this is drinking now we would suggest one drinks a few sooner than later and make sure to take advantage of this fresher side. Lovely stuff 94-95
The Leflaive/Lafon/Coche with Uncle Jake (Sushi Katori): Oxidative style that showed some age which we guessed was because of long lees rather than development in bottle. Crisp, tart and precise with ripe apples, pears and ginger flower. Good acidity that should tone down in time. Would like to revisit in 5 years!

Brioche, ripe apples, pear, nuts, honey and some fattiness.. Great depth and punch. It lacked somewhat some acidity to keep the volume of the mouthfeel and taste down. I would not hold on to this for a very long time. For my taste it is peaking now and the next 5-7 years. It was tasted up against RD 2008 and you could really feel the lack of acidity. Still an incredible wine.

Creamy and a bit rich on first pass, the 2007 RD holds a rounded profile, slowly unfolding with grilled and bruised yellow citrus and stone fruit, ginger powder, olive oil, poached pear, Rainier cherry, and saline notes that gradually present with notable depth of flavor. It executes with focus and intent: a stroll in the park, but with enough leg weights and arm bands to make it a purposeful dad-walk exercise outing.
For my palate, this is a drink sooner kind of Champagne. The acidity and speed do their jobs to balance the contours of the wine, but the tension is quite medium and even-keeled. I also prefer this on the colder side, which helps to keep the flavors from fanning out too much and losing focus. The scaffolding needs as much energizing as it can get, and temperature helps here. The fruit is certainly ripe enough that a cooler serving won’t mute the flavors much. 92-94 points.

July 4th Mondo Event (Atlanta, GA): This was not nearly as good as I remembered it from 2022. This was bigger and bolder than I remembered and tasted slightly oxidized (I came to learn this is the Bollinger style). Nevertheless, I still enjoyed it. Just didn't live up to my prior tasting experience.

Opened at the Bollinger dinner in HK. Unsure of airing time but opened beforehand and chilled.
Best wine of the night, but unfortunately for my tastes not amazing. I didn't take many extensive notes but this was definitely a step-above in terms of fruit and especially the precision of the acidity. Very good champagne, but when approaching these prices I would probably look elsewhere - I don't think this would defeat a Cristal or a Krug GC, for example.

I think this wine falls behind the 04. Pinot comes through, but it’s a bit astringent and coils up with air rather than the reverse. A bit backwards yet and not as giving as the 2004 l’d suggest to hold at least a couple years before opening.

La Festa del Barolo: Gala Dinner (The Pool in NYC): The truth is you can’t really have a Festa without some champagne. It’s a lot of big red wines and while this was on the earlier side to see the bottles coming out it was much appreciated. This is very toasty in style. A bit more evolved than I would have guessed especially as it was pouring out of magnum but maybe that is the style/the vintage? In a good spot though earlier than I think most champagne is and quite enjoyable.

Late night big session at Maison Dakota. Drank in Gabriel Standart. Appearance is clear, medium intensity, yellow gold colour. Thin legs. Fine bubbles. Nose is clean, medium+ intensity, with aromas of nougat and cream, citrus green lime, saline minerality. Touch of honey drizzled on toasted brioche bread as it gets more air. Developing. On the palate, dry, high acidity, medium- alcohol (12.5%), medium body. Medium+ flavour intensity, with flavours of citrus green lime, green apples, sweet cream, nougat, hay, saline minerality, chalky mineral, bit of honey on brioche bread with more air again. Very focused long linear finish. Very good quality. To me, feels like this still needs more years of bottle age. Somehow I feel this bottle is fresher than the other bottles mentioned on CT. Needs lots of air and some warming up to coax the notes out of it. 70% Pinot Noir, 30% Chardonnay.

10 July 2020 disgorgement after 12years under cork. Bollinger longevity is always a question for us and this 2007 RD felt like at the proper timing as we like vinous champagnes but we worry is that this is better sooner than later as the wine was low on energy. Still beautifully mature, soft honey, lots of brioche. Quite elegant too and a lovely 95 from us but please drink sooner than later.

The best wine of the day in my opinion as it has a vibrancy of a young wine while still the maturity starting to show off some beautiful notes of brioche and nice creaminess. I’m really happy drinking this now – but I will wait a couple of years before opening the next bottle (If I don’t get a few more 😅).

Backlog. 500 bottles to Norway. 13 years on the lees, before degorging 21. august 2020. Brioche, citrus, red apples, honey and some peach on the nose. Dry. Delicate, creamy bubbles. Huge mourhfeel and vibrant acidety. Citrus, honey, apple, caramel and nutty-notes on the palate. Great minerality. Loooong exit, with marzipan and toffee. Just wow🍾🍾🍾

Fida Sandrone lunch/ Barb Sandrone (Ci Siamo): Out of magnum. This had a lot more age than I would have expected given the year. It's less of the new age style of very racy champagne. Instead more heft to it and a bit more nutty and generally an enjoyable one to drink. Usually I'd say needs more time but I don't know if time will help this one as much as some.

Celebrated today! Bollinger RD 2007 was fantastic! With aromas of marzipan, banana, pear and flower meadow. Incredibly lovely beginning. The taste is smooth and incredibly complex. There are flavors of tart plums, star fruit and hazelnuts. Plus a number of new flavours that came later.
We had a tartare of beef tenderloin with oscietra caviar to accompany. Then there was wagyu from Japan and lots of other goodies. But by then we had changed the wine to Chateau Musar.

2022 New Year's Day Tasting (Atlanta, GA): Non-blind; Mirabelle, nutty, almost mushroom powder, lots of autolytic notes; almost blueberry on the palate, intense, very extra brut in style but enough fruit and creaminess on the finish to balance out the acids; delicious and a great way to wake up the palate.

New Year's Day Double Blind Tasting (Atlanta, GA): Unblinded. I really enjoyed this wine and it came at the right time in the tasting event as an intermezzo to cleanse our palates. Fresh, full bodied, and the perfect amount of acidity. I would buy more of this if I could find it. Delicious!
Well what a disappointment. I'm not the most prolific champagne drinker and this could simply be just not my taste. (Never thought that much of Dom Perignon either.) Compared with Grande Année or Taittinger's Comtes de Champagne this is just thin and too yeasty.

Very nice toasted nose with an omnipresent raspberry. Winey and fresh on the palate, it is powerful with exotic fruits that fill the palate, but it still lacks amplitude and length.

#1 place in the flight with Bollinger 2012 grand cuve and Krug grand cuve. Tasting with Lisa Gudnason Karen Freimark. M. Gold color. Toast pear on the nose, cream coming out as it warmed. Beautiful mousse in the mouth, taste of toast, brioche, and hint of pear. Less fruit as it warmed, moving toward cream. Super long finish. Outstanding, best of the night.

I'm always amazed at how this Maison's cuvées are always on point, from the Special Cuvée to the Vielles Vignes. If I had to pick one Champagne to drink for the rest of my life, Bollinger would definitely be in the conversation. Tasted blind, the colour was a pale gold, very bright and intense. Fine bead of bubbles, continuos and slow through the top of the glass. Nose left me speechless, I could smell it for hours. It kept changing from balsamic/minty notes to floral and perfumed, white flowers, lillies, to stone fruit, ripe peach and golden apple, and red fruits, fresh raspberry and tart cranberries. With time, notes of patisserie, brioche, and even a subtle toasty nuance came alive, almost an oriental type of wood. A wide spectrum of aromas made the olfactory part just sensational, a deep experience of senses. The first word that comes to mind about the palate is harmony. Everything was in complete balance: extremely fine bubbles, delicate mousse, integrated acidity, generosity of fruit, and lingering sapidity. Incredible mouth feel, it lasted forever. Spices also made an appearance on the finish, leaving a very pleasant bitter sensation, with a citrusy overtone cleaning up the palate for the next sip. I wish I had more RDs in my cellar. A legendary Champagne, one of the best in my book. Enjoy it now, but if you have several bottles, it's nice to see the evolution of it, cause I know it will only improve from here.

Disgorged July 2020. Fantastic, so fresh for a 14 year old wine ! Bready, yeasty with a subtle mushroom aromas that follow through on the palate. Layered and complex with fine bead, an utter delight to drink a step above . Score 98-100pts. It may even get better with time!

Backlog. 500 bottles to Norway. 13 years on the lees, before degorging 21. august 2020. Brioche, citrus, red apples, honey and some peach on the nose. Dry. Delicate, creamy bubbles. Huge mourhfeel and vibrant acidety. Citrus, honey, apple, caramel and nutty-notes on the palate. Great minerality. Loooong exit, with marzipan and toffee. Just wow🍾🍾🍾

Instead more heft to it and a bit more nutty and generally an enjoyable one to drink. Usually I'd say needs more time but I don't know if time will help this one as much as some.

Celebrated today! Bollinger RD 2007 was fantastic! With aromas of marzipan, banana, pear and flower meadow. Incredibly lovely beginning. The taste is smooth and incredibly complex. There are flavors of tart plums, star fruit and hazelnuts. Plus a number of new flavours that came later.
We had a tartare of beef tenderloin with oscietra caviar to accompany. Then there was wagyu from Japan and lots of other goodies. But by then we had changed the wine to Chateau Musar.

2022 New Year's Day Tasting (Atlanta, GA): Non-blind; Mirabelle, nutty, almost mushroom powder, lots of autolytic notes; almost blueberry on the palate, intense, very extra brut in style but enough fruit and creaminess on the finish to balance out the acids; delicious and a great way to wake up the palate.

New Year's Day Double Blind Tasting (Atlanta, GA): Unblinded. I really enjoyed this wine and it came at the right time in the tasting event as an intermezzo to cleanse our palates. Fresh, full bodied, and the perfect amount of acidity. I would buy more of this if I could find it. Delicious!

Well what a disappointment. I'm not the most prolific champagne drinker and this could simply be just not my taste. (Never thought that much of Dom Perignon either.) Compared with Grande Année or Taittinger's Comtes de Champagne this is just thin and too yeasty.

What’s James Bond likes is fine for me as well 😉pale golden color fine bubbles with motes of butter brioche exotic fruit touch and fresh roasted almonds. Full bodied perfectly balanced and very complex, long and persistent on the palate.

#1 place in the flight with Bollinger 2012 grand cuve and Krug grand cuve. Tasting with Lisa Gudnason Karen Freimark. M. Gold color. Toast pear on the nose, cream coming out as it warmed. Beautiful mousse in the mouth, taste of toast, brioche, and hint of pear. Less fruit as it warmed, moving toward cream. Super long finish. Outstanding, best of the night.

First prestige champagne ever. Too young? Too high expectations? First a bit disappointed but over time the wine grew on me. An experience for sure.
Drank wine with my wife. Added note extremely late so a bit unsure about exact date and details next bottle report in 2031 or something

I'm always amazed at how this Maison's cuvées are always on point, from the Special Cuvée to the Vielles Vignes. If I had to pick one Champagne to drink for the rest of my life, Bollinger would definitely be in the conversation.
Tasted blind, the colour was a pale gold, very bright and intense. Fine bead of bubbles, continuos and slow through the top of the glass.
Nose left me speechless, I could smell it for hours. It kept changing from balsamic/minty notes to floral and perfumed, white flowers, lillies, to stone fruit, ripe peach and golden apple, and red fruits, fresh raspberry and tart cranberries. With time, notes of patisserie, brioche, and even a subtle toasty nuance came alive, almost an oriental type of wood. A wide spectrum of aromas made the olfactory part just sensational, a deep experience of senses.
The first word that comes to mind about the palate is harmony. Everything was in complete balance: extremely fine bubbles, delicate mousse, integrated acidity, generosity of fruit, and lingering sapidity.
Incredible mouth feel, it lasted forever. Spices also made an appearance on the finish, leaving a very pleasant bitter sensation, with a citrusy overtone cleaning up the palate for the next sip.
I wish I had more RDs in my cellar. A legendary Champagne, one of the best in my book.
Enjoy it now, but if you have several bottles, it's nice to see the evolution of it, cause I know it will only improve from here.

Disgorged July 2020. Fantastic, so fresh for a 14 year old wine ! Bready, yeasty with a subtle mushroom aromas that follow through on the palate. Layered and complex with fine bead, an utter delight to drink a step above . Score 98-100pts. It may even get better with time!
