Drank on a flower day. I've usually preferred the regular bottling of Chevalier Montrachet to the La Cabotte. Perhaps I've just not held them long enough. This bottle was drinking very well and can hold a few years though the colour would suggest otherwise. Smells of a woodland trail early in the morning. Flavours are stony with just a hint of marsipan and crushed raw almond. Good length.

This was the most "on" bottle of La Cabotte I can recall tasting. Usually this wine seems to be perpetually coiled up, all tension waiting to unwind with time. This vintage is right where it should be, very accessible, and unlikely to improve in time. Drink up now and enjoy the long, precise, mineral finish.

SS's birthday celebration at Garibaldi. Dark yellow, close to orange. This seemed fairly aged. Nose was outstanding, a Comte Lafon style of cream, mangoes and white roses. Palate had sweet popcorn, toffee, buttercake, lovely elegance and structure which kept improving in the glass. Really outstanding!

I've opened 3 bottles so far. 1 was absolutely fabulous, with reduction still on the nose at the start, and a fabulous minerality with all the chevy goodness. 1 was premoxed so bad it was unpleasant, and the third was middling premoxed (advanced): still quite enjoyable, but more like a 20+ year old Chevy. The color was different all three times, in proportion to the oxidation. So, sadly, like many wines from this period, there seems to be a dangerously bad premox problem. Quite annoying given the pedigree (and the price).

Much much better than the last time I had it. Popped and poured and served without chilling.Took about the second glass to start opening up. Notes of yeast, butter and yellow fruit on the aromas, as the bright golden color doesn't show great age yet. On the palate, the wine was singing with crazily intense flavors, rich, muscular mouth coating extract - the quintessential power without weight. Astonishing presence and persistent finish too. A great Chevalier (or is it Monty) exuding with elegance. The only disappointment is this was my last bottle.

Blind White Tasting with Top 2000 White Burgundy (Les Nomades - Chicago IL): Tasted single blind in this flight, I was slightly disappointed with this wine vs its reputation. Modest in every regard, I frankly didn't find Grand Cru intensity here. This was open 2 hours before serving, next time I will pop-and-pour this wine.

Seems to be more muted compared to the last time I had it. No longer as flamboyant but still exhibiting the refinement of a Chevalier. I get hints of creamy fruit and some light oak on the nose and a very mouth-filling presence on the palate. Quite a lot of secondary flavors here and it's about time to drink up.

2000 Vintage Great White Burgundy Dinner (Boka - Chicago IL): Single blind in a flight of Montrachet and Montrachet "neighbors." This was one of the more exciting and enticing wines when I opened and smelled this bottle at around 5:45. It showed great spice, perfume and ripe fruit. While I didn't taste it then, I thought it would be one of my two favorites of the evening (other being Leflaive 2000 Chevalier-Montrachet). By the time we got to this flight, perhaps around 9 PM, this was far less exciting. Perfume was mostly gone, and the nose still showed good spice along with mature apple and pear. Palate was also fairly evolved with good density but moderate length. For my remaining bottles I will either pop-and-pour or give much less time for the wine to breathe.

very ungiving at first. light golden color and very tight on the nose. took about 20-30 mins to open up. mostly in the yellow spectrum in terms of fruit with some decent minerals. it had some weight but somehow found the mid palate a bit simple. very strangely, the wine started off very tight but just died after about 2 hours and tasted totally oxidized

Nice golden color, citrus nose infused with some fresh butter. Pretty full body with brioche and vanilla, medium plus finish. Nose closed down considerably after two hours, good but not great especially with this price tag.

Simple Series II: Henry's Birthday (Ming Kee, Macpherson Road): This has joined the very short list of my favourite white wines ever. As good as the Leflaive that came immediately before was, this wine completely obliterated it. It wowed me from the very start with a completely enchanting nose. Whites flowers, a touch of vanillin, cream fraiche, white fruit, typical Monty buttery button mushroom, earth and even a squeeze of yuzu lime. It was really attractive, and yet serious and very complex at the same time. If anything though, the palate was even more impressive. Grand Cru weight and richness was wed to Bouchard's typical clean, understated elegance here. Rich, buttery and powerful, yet choked full of seamlessly integrated and super-fresh acidity - it was supreme show of class and elegance. It started out a little slow, seeming to have a little gap at the mid-palate, then it slowly built and built in the glass to become a really complete, palate-enveloping wine. Cream, butter, sweet yellow fruit, a lovely mineral seam - massive flavours, but theses came in gentle unfolding layers almost caressing the palate. Finish showed stunning persistence - flowers and fruit just went on and on in a great, round, plush glide through the back-palate. What a beautiful wine. I can remember almost every detail even now, more than 12 hours after my last sip!

Golden color hinted that it might be corked. However, it opened up after several minutes in the glass with a floral bouquet and rich minerality on the palate. The finish was deep, rich, even and lasted several minutes. A dream wine with hints of lemon, steel, and a soft roundness on the palate with a solid center of balanced minerals.

Bouchard Père et Fils Grand Cru: Lieu-dit Cru Blind White Burgundy Dinner (S.K.Y. Restaurant - Chicago IL): Tasted single blind in La Cabotte flight, served to the group double blind. Slightly tired with rich baked apple. Age has lessened the wine's weight. Slightly past its peak.
