At the Wolf restaurant in Oakland, served to us blind from Walter. Light gold in color, with a fragrant nose that makes me think and say Chablis. However on the palate I get cantaloupe and honeydew alon with some peach apricot and citrus. A bit of acidity, but I can't detect any minerals. Knowing Walter recently returned from visiting Loire, I guess a 2010 Loire Chenin Blanc. Wrong again! I guess I just over thought it. Nice wine that wenr well with halibut appetizer,

This is in fantastic shape and just starting to get interesting. Great acidity, a tiny bit of oak, and a really elevated with grilled clams. Exactly what you want in a traditional chablis!

Perfect now. Crisp but rich, layered flavors of melon, citrus, guava. I wouldn't wait - excellent on first day but started to degrade a bit on day two.

A pale green to straw colour with medium intensity on the nose. Positives: One of the best Chablis I have tried. The Premier Cru Chablis features white and pink grapefruit, lemon, green apples, anjou pear, honey, limestone, lemon zest, honeydew melon, and honeysuckle and jasmine on the nose. Medium body with good acidity and a long length. Negatives: None Drink now or over the next 5 years, on its own or pair it with oysters. no sign of tiredness. this bottle (again) has a razor-sharp focus. citrus blossom, apple, liqiud stone/ fleur de sel, fresh toast. wonderful companion for sea bass (cooked in a Chavy Bourgogne 2007 with tomatoes, sea weed, roasted garlic, lemon, olive oil, touch of bacon and tarragon). drink now or finish before 2014. This is Chablis.

I don't know what it was with this wine tonight....but it was absolutely singing!! Wonderful purity, crystalline....just loaded with the right ripeness of fruit, dancing hand to hand with crisp lemon/lime, green apple skin acidity. Beautiful blossom, lilac florals...and to make it known where we are....a sea full of crushed shells and stones...chalk dust spice. We killed this bottle very quickly...stunning!

Sweeter and more delicate on entry than the MdT. Mineral bath is also gentler. Something savory about this wine. More open and ready than early reviews suggested. Nonetheless should hold up well for another five or six years.

There’s some custard apple, orange blossom and plenty of citrus fruits to the aroma. In the mouth it is precise, rich and bright with good depth of flavour and great minerally cut to the finish. I must be the luckiest Fever drinker on the planet as I have had next to no instances of premox from 00-07 and I drink a shite load of Fevre in a year.

Dallas 2nd Wednesday Group - July 2010 (Urbano's in Dallas, TX): Tasted non blind at a wine dinner. Light yellow color in the glass, clear hue throughout. Nose of matchstick dominates followed by notes of pear, apple, apricot and a hint of earth. Flavors of peach, lime and minerals. Bright acidity, light to medium body. Drink over the short term.

Opened last night, finishing tonight. In comparison to some other recent Chablis selections I have noted on, this Montmains seems to have the richest core. Wrapped around the core is of course minerals, mainly what is more like flint, but the fruit is more lemony, with even a custard-like feel. Plz, don't construe this remark to mean it is cloying or syrupy--god no, but it does reflect a richer mid-palate than say the recent Dauvissat or Brocards I have drank. With the lemon note, also some green apple, like a granny smith and pea pod, what one might sense in crunching into a fresh bean pod off the bush. I'm working hard here to lay out what's in the glass and I like it. While it doesn't have that crush of acidity and cut, it does possess enough of these traits, joined with the wonderful fruit notes, to create a very nice wine. This was a gift from my friend, Sean--thank you pal for the bottle, as I am enjoying it a lot.

Blind- Faint yellow tinge in the glass. Smells of rocks with hints of oak. Palate is sharp, big cut of acidity here. Dry, very dry. Nice and crisp. A lot of power on the finish. Shows young and could stand some time in bottle IMO for an even better showing down the road.

I am a bit of a chablis freak and this wine is really nice, completely reminds me of the acidity of 04 and the round finish of 02... The hype on 2007 could be for real. Liquid stone, lemon, quince and sea breeze. Slightly bitter on the finish. Green gold...

True to form and vintage with all its geological matter and sea spray. There’s a nice thread of mint running through the wine and the linear spine is sheathed by a nice layer of glycerol.

This was labeled "Mountain" on a French wine list and didn't cost much above shop price. From memory, this is already drinking very well and is fairly ripe for a 2007 Chablis, while still having a distinct flinty mouthfeel. Tastes dry but rather fat. I liked it and it went well with the food.

Crammed with crunchy bosc pear, granny smith apples and lime sherbet. It crackles and fizzes on the palate delivering a punch of orchard fruits that are buffered by a little glycerol and drawn out on the finish by a healthy blast of lemon juice and cooling minerals.
