Trepidation while operating the corkscrew - surely this must be dead, or failing that at best 'interesting'? But no - the colour obviously positive and the wine in fact incredibly fresh and vital. It is an interesting wine, as despite the fresh acidity there was no fruit whatsoever, just structure, shoe polish and an almost-savoury stony, mineral flavour. Long, bitter, toasty finish, that was slightly creamy as the glass warmed. A bit like a higher-alcohol Hunter Semillon, perhaps?

Our server advised pairing a half-bottle with each course we were having, so we enjoyed a Grüner Veltliner with our first course (champagne cured local sardines for him and a roasted heirloom beet salad with dungeness crab for me), and a Châteauneuf-du-Pape Blanc with our second course (cast iron roasted California white bass for him and cedar grilled cascade mountain Arctic char for me). I love Rhône reds and found the Rhône white equally delicious. The contrast between the two white wines made for an enjoyable and memorable experience.

Drank over two evenings at home-the first with cold poached salmon and the other with roasted chicken. The second evening was was informative as how wonderful the wine eveolved over 24 hours, re-corked, and put in the refrigerator. the lemon, white peach, acacia, and hints of ripe apple, all merged beautifully into a long mouth filling finish. Balanced beautifully.

nose: waxy and interesting nose right off of pop n pour. Balanced with a richness to it and tones of honeycomb, orange rinds, white fruits, a touch of acacia flowers with a wax base. Good depth with very good complexity as well
taste: medium/full bodied with a good richness and fatness to the palate. medium acidity that provides a crisp quality. Balanced with good depth and succulent tones of honey, wax, orange rinds, and some white fruits
overall: this has a medium gold color to it. Though I don't drink that many CdP blancs all that often, wines like this remind me why I should. An extremely good wine that brings a lot of intrigue and complexity

opened at about 55F. Was closed, medium body, with dry, somewhat off putting flavors. Had some chewiness and tightly knit concentration of flavors. Could not quite pin down what the flavors were. Did not notice much change as the bottle had time to breathe and warm up. Next bottle, I will let it breath and warm up before indulging.

Awesome young white CdP, wow. Just singing. Pale in color, when cold in the glass initially there is a steely, frozen metals and almond butter. As it warms in the glass you get more the white chocolate, roasted almond, sexy truffley mushroom and a touch of petrol. Exotic cinnamon mint swirls in and out too – nose and palate, and the palate has a wonderful richness yet still is light on its feet.
