Don't get me wrong, I think it is delicious right now, but it's young, and I think it would be a little intense for turkey. I'd much prefer a older champagne. But take my opinion with a grain of salt, since I am very OCD about pairings. I think the CdC is currently so intense and showy that it would go great in big tastings and with rich food.
