(NV Bollinger Champagne Special Cuvée Brut) This Pinot Noir-dominated blend undergoes its first fermentation in small oak barrels with an average age of 30 years—a technique believed to produce a more expressive, terroir-driven wine with longer aging potential due to its early oxidation. Straw-yellow in color, it’s a bold, earthy Champagne with aromas of toasted barley, chalk, and seashell. What's another TN among Bollinger aficionados? You should not visit the Montagne de Reims without visiting the Perching Bar - that is if you like champagne. Worth the rickety climb up rope ladders to be rewarded by some generous pours. We had this same wine six years prior in this location. Rich pale gold and big and bracing.

A glass of beautiful golden color, animated by very fine bubbles. The sight succumbs to its enchanting charm, followed by the scent: notes of ripe fruit, spices, and candied apples create a rich aromatic atmosphere full of details. I've already rated Bolly twice but it's just so consistently delicious. I always ask myself after a bottle why you wouldn't just spend the 10 EUR extra on this rather than buying anything else. This bottle dégorgée November 2018 according to the L code on the foil capsule.
