Brian + Sylvia, Pre-Wedding Dinner (Lot 80, Margaret River): I had quite forgotten having had this before. Again, this was a lovely polished showing. The nose showed little notes of cream, a whiff of apple flesh and a nice yeasty afternote. The palate was really fresh and lively - with a fine effervescent mousse and laser-like acidity lending the wine a lovely definition and tension that went very well with its otherwise soft, white-fruited character. The finish was decent too, with just a lovely line of mineral and spice trailing away on the back-palate. Still young, fairly simple, but this was a really nice NV with the bones to age beautifully.

Pure mineral, somewhat steely. Mature citrus fruits and brioche, MLF. More gentle and creamy
Less bubbly, because of using less atmospheres pressure. 6g/l dossage - on a sweet side for my Brut Nature calibrated palate. On a feminine side in style. Very easy, but with charm.
Historical Cuvée. 2013 year base. 40% of reserve wines.
