Top notch typical Cayuse Cailloux bottling. First and foremost...funk on the nose with pepper, leather, dark fruit and coffee. Gamey, sanguine palate with dark fruit, olive and chocolate. Ready to go with 1+ hour decant. Plenty of time left.
At first not overly impressive at the restaurant, but opened nicely at home afterwards. Medium garnet, mostly opaque. Aromas are soft and elegant, showing dusty, earthy notes, with some pepper. Black fruits in the nose and on the palate. Medium-full body, blackberry-cassis flavors which build over 30 seconds, very balanced, round, showing some elegance and subtleties. Very long, round aftertaste, with some licorice and a bit hot. This is not one of the more powerful Cayuse syrahs but is very drinkable, probably at its peak, but should hold well. Ric
