If you would bottle the essence of Granny Smith apples, this wine would be it. It smells like apples and really tastes like them. This wine has a high level of acidity that makes it a great wine to pair with food. Dryer than an apple with not much residual sugar, this wine was a great match for peanut sauced Asian noodles. Great finish with some length. I need more before it is gone.

Summer 14 Roadtrip -- Cass House (Cass House Inn & Restaurant, Cayucos CA): Like baked pie hot out of the oven fresh. Waffles with maple syrup and fresh fruit. Vinegar graham cracker. Very exciting.

Absolutely fantastic. Unique nose from the wild yeasts. Tons of acid and bursting with flavor. One of the best Rieslings I've ever had.
