This had a typical Saron nose, with some earth, VA, deep red/purple fruit and some savory tones. Stone and spice show up on the palate, backed some by some beefy tannins. It all mellowed and integrated a bit over the course of the bottle, getting in better balance with the acid and the food (lamb, a gratin, and even some sharp parmesan in a salad). A great drink.
