  Unique flavors of both citrus, orange without pith, and yeast/biscuit. Medium bubbles. A sparkling with backbone.

  Popped and poured. Paired with scallops in a meyer lemon sauce. Color was a dull yellow, not quite gold but not vibrant either. Lots of fine textured bubbles right after pouring the glass, but by the time the glass was halfway consumedthe bubbles were gone and it could be mistaken for a still wine. Initial notes on the nose while the bubbles were present had a distinct aroma of the inside of a freshly cut waxy potato. There were also notes of lime zest and grapefruit. More lime on the palate along with fuji apples and chestnut. Pleasant texture on the mouth feel. Would purchase again.
