Relatively deep gold. However, no sign of premox, appropriately oxidised for a 12 year old Chablis. A bouquet of grapefruit and lemon zest, some crunchy green apple, wet oyster shell, tide pool and a touch of baking spice. On palate, mature, classic Chablis. Taut and dry. Compared with in my 2017 tasting note - as you would expect - the Séchet less primary and fruit forward, more mineral and saline. Steely and chalky with fine lemon and lime citrus, peaches, greengages and green apples. Vibrant, fresh acidity. Satiny mouthfeel. Moderate alcohol (13% ABV) and - as is the practice with this Domaine - no oak. Finishes long, dry and mineral. This Séchet should continue to drink well, in this style, beyond 2030. If the Séchet is this good, I look forward to opening my 2010 Louis Michel Les Clos ...

Popped and poured. Served with pasta and grilled salmon and fresh peas. Wine is yellow with a hint of green in color. Nose of fresh hay. Medium body. Good mouthfeel. Notes of red grapefruit with peach in the background. Hard to pick up the effervescence on the tongue that we had noted in 2017. Lingering finish.

Deep tulip yellow. Lemon, chlorophyll, and iodine. Medium weight, superb glycerine feel. Wow, a truly Chablisien Chablis-tart lemon, herb, fantastic stone, and no undue sweetness at all. I enjoyed every sip of this.

Still young, pale, taut, astringent. Hints of oak that isn't there. Though undeveloped, works well enough with Thai/Vietnamese food. Maybe the fruit will show in 2-3. NR for now. Hold.

2017 Louis Michel Chablis (Dig Wines, San Francisco): Medium yellow. Too bad, lots of nice elements here-real sea breeze, great acidity, a texture that could fool you into thinking that some wood was involved, and a touch of honey. It all competes with a muting mustiness that is most prominent on the aftertaste. I went back and forth with this, but finally, I decided it was sound, and the finish eventually improved. Perhaps a little more advanced and dull than a perfect bottle, but this still has a lot of guts. Look forward to retrying my one remaining bottle.
